Servings: 14-15 fritters depending on the size
Cooking Time: 45 minutes
Ingredients:
- 1/2 cup grated carrot
- 1/2 cup fresh corn
- 1/4 cup finely chopped beans
- 1 medium sized potato grated
- 1/2 cup finely chopped cabbage
- 1/4 cup finely chopped coriander
- 4 – 5 green chillies finely chopped (adjust it according to taste)
- 1 cup gram flour ( besan)
- 2 tbsp rice flour
- Salt to taste
- 1 tsp red chilli powder (adjust it according to taste)
- 1 tsp coriander powder
- 1/4 tsp asafoetida (hing)
- 1/2 tsp carom seeds (ajwain)
- Water as required for the batter
- Oil for frying
- Chaat masala to sprinkle on the fritters
Procedure:
In a deep bowl add grated carrot, fresh corns, finely chopped beans, grated potato and finely chopped cabbage.
Also add finely chopped coriander and green chillies in it. Then add gram flour and rice flour along with the veggies.
Now add salt, red chilli powder, coriander powder, asafoetida and carom seeds in it. Mix all the ingredients nicely and make a thick and stiff dough using little water as required. It will look like the second picture given above.
Take oil in a kadhai for deep frying. When oil is hot enough, take small portion of the batter and shape it roughly like a ball and drop carefully in the oil. Keep the gas on medium heat. Like this drop 2-3 balls more in the oil and fry it on medium flame till it is light golden brown and looks like the second picture given above. Fry on medium heat only otherwise fritters will remain raw from inside.
When the fritter has turned light golden brown, take it out on an absorbent paper and press it with the back of the slotted spoon which we are using for frying as shown in the picture above. Press it and make it like a patty. You can press it and make it more thin if you want. Press the fritter as soon as it is out of the kadhai otherwise later on it will turn hard and it will be difficult to press it. Like this fry rest of the fritters.
Now again deep fry the fritters which we have pressed and kept till it tuns nice golden brown in color and is crispy from the outside. Deep fry it on low to medium flame so that it is cooked properly all the way through. We deep fry it again so that it becomes crunchy and crispy.
Delicious vegetable fritters are ready to be enjoyed. Serve it hot with coriander peanut chutney, coriander mint chutney, plain old ketchup or any sauce of your choice. These goes really well with a hot cup of tea or coffee. If you are expecting some guest then you can fry these once and keep it, then fry it second time once your guest arrives. Like this you will be able to serve crunchy and crispy fritters in a very little time. You can also add finely chopped onion in the batter, it will taste better. This is also a good way to make your kids eat all the veggies. Do try this out friends and please let me know how you like it. Enjoy !!
