Pineapple Cream

Servings: 5 – 6

Cooking Time: 30 minutes

Ingredients:

  • 1 cup pineapple chopped into small pieces (fresh/ tinned any can be used)
  • 1 tbsp unsalted butter
  • 1 tbsp sugar
  • 1 and 1/4 cup heavy whipping cream (fresh cream)
  • 2-3 tbsp powdered sugar ( you can add more sugar if you want more sweet)
  • 1 tsp pineapple essence
  • Few maraschino cherries for garnishing

Procedure:

Chop the pineapple into small pieces and keep it ready.

Take a pan and put it on medium heat. When pan is little hot, add 1 tbsp butter and when butter starts melting add 1 tbsp sugar in it. Mix it nicely. If you are using fresh pineapple then add little more sugar if pineapple is sour. Taste the pineapple before using it.

When sugar has melted completely, add chopped pineapple and mix it nicely. Keep the gas on medium heat.

Cook the pineapples till all the sugar and pineapple juice mixes nicely and reduces completely. It will take around 7-10 minutes. Keep stirring it in between. It will look like the second picture given above. After it has reduced, switch off the gas and let it cool. Use it only when it has completely cooled down, otherwise it can melt the cream.

Take chilled heavy whipping cream in a deep bowl and add sugar in it.

Now whip the cream with an electric beater for around 3 – 4 minutes. It will look like the picture given above.

Add pineapple essence and again beat the cream till soft peaks form. It will take around 4 – 5 minutes. It will look like the second picture above.

Now you can serve pineapple cream in any way you like. Either you can mix pineapple and whipped cream gently, pour it in a beautiful glass or bowl, garnish with cherries and serve chilled or layer it in a desert glass as shown in the picture above. Take whipped cream in a Ziploc bag, seal it and cut one of the end little bit and pour it in the glass neatly. I have layered the cream and pineapple alternatively as shown in the second picture above.

Now garnish each glass with maraschino cherries and keep it in refrigerator for at least 30 minutes or till serving.

Super delicious Pineapple Cream is ready to be enjoyed with your friends and family. This desert is perfect for hot summers, when we want to have something sweet but don’t want to eat anything too sugary or heavy. This is very lightly sweetened. It is good in refrigerator for 2 -3 days. You can easily prepare this desert ahead of time and be a party queen. Do try this out friends and please let me know how you like it. Enjoy !!
