Today I am going to post recipe for Eggless Blueberry Pancakes. Yes, you heard it right these are eggless and super fluffy, light and delicious. Pancakes are classic American Breakfast item, pair them with eggs , breakfast potatoes and cup of coffee or tea, Sunday brunch is sorted. What not to love about it. My husband is little picky about his pancakes but he absolutely loved this Blueberry pancakes. When I made them for the first time my husband loved them so much that he asked for them again the next day. Even my 18 month old loves it. It is super versatile recipe, you can keep it as plain buttermilk pancakes or can customize it with any fruit or berries of your choice. Lets dig into the recipe-
Servings: 5-6 Pancake depending on the size
Preparation Time: 10 minutes
Cooking Time: 20 minutes
Ingredients:
- 1 cup all purpose flour (maida)
- 2 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/4 tsp salt
- 1/4 cup sugar
- 1 cup whole milk
- 1 tbsp vinegar
- 1 tbsp butter
- 1 tsp vanilla essence
- 1/2 cup blueberries
- Butter for making the pancakes
- Maple Syrup for serving
- 2 tbsp blue berries for garnishing
Procedure:


In a bowl take all purpose flour, to it add baking powder, baking soda, salt and sugar. Give all the dry ingredients a good mix.

Take 1 cup milk, milk should be luke warm or at room temperature. Add 1 tbsp vinegar to it and let it sit for 5 minutes. Milk with curdle and form buttermilk. If you have buttermilk then you can use 1 cup buttermilk.


Once milk h curdled, add it to the dry ingredients, also add butter and vanilla essence. Mix it nicely to have a smooth and lump free pancake batter. Do not over mix. You can use wire whisker to make a smooth batter. Let the pancake batter rest for around 10 minutes. It is very important to get fluffy and soft pancakes.


After 10 minutes stir in the blueberries and give it a good mix. Our pancake batter is ready.


Keep a iron skillet or a non stick pan on medium heat. When the skillet is hot enough smear butter and pour batter with help of a spoon. Keep the heat on medium flame.


After few minutes you will see bubbles on the pancake as shown in the first picture above. It means that pancake is ready to be flipped. With a flat spatula slowly flip the pancake and cook it again fir few minutes. Take it off the skillet and keep it on a plate. Like this make rest of the pancakes.

On the warm pancakes drizzle warm maple syrup (I load mine with lots of syrup, it tastes super yummm) and add some fresh blueberries for the beauty and flavor. Warm delicious blueberry pancakes are ready to be enjoyed. You can also serve this with any fruit preserve of your choice or a big dollop of butter.
This is a super versatile recipe. You can easily customize it as per your liking like add any berry of your choice like strawberries, raspberry or blackberry. Even you can add some chocolate chips and can make chocolate chip pancakes. Kids will love this version of this chocolaty pancake. This pancake batter is also good in refrigerator for 2 days. If by chance you have any left over batter, just keep it in any airtight container and next day breakfast is at your fingertips.
