Servings: 14-15 small size ladoo
Cooking Time: 15 minutes
- 1 cup sooji (rava, semolina)
- 2 tbsp ghee
- 3/4 cup condensed milk
- 4 tbsp milk
- 1/4 tsp cardamom powder
- 1 tbsp pistachio for garnishing
Take a pan/ kadhai and add 2 tbsp ghee in it. When ghee has melted and is warm enough add sooji in it and stir it nicely. Keep the gas on low to medium heat.
Roast the sooji on low to medium heat till it gets light golden brown and nice roasted aroma starts coming. It will take around 7-8 minutes. Keep stirring it continuously so that sooji gets roasted evenly and have a very beautiful light golden color.
When sooji is roasted nicely, add condensed milk in it and mix it nicely. Keep the gas on low flame.
Then add milk and cardamom powder in it and mix all the ingredients nicely. Keep the gas on low flame.
As soon as all the ingredients have mixed nicely switch off the gas and let the mixture cool for few minutes. When the mixture is warm enough to handle, grease your hands with ghee and pinch a small portion of the mixture and roll between your palms to give it a round shape. Finally garnish it with a slice of pistachio. Like this make rest of the ladoos. Do not let the mixture to get completely cool, other wise it will get hard and it will be difficult to shape the ladoos. If the mixture gets hard then warm it up a little bit, it will get soft again.
Super quick and delicious rava laddus are ready to be enjoyed. These ladoos are good for 2-3 days at room temperature. Keep them in an air tight container. These can get little hard in texture, just warm them up a little bit in microwave and it will be soft again. Do try this friends and please let me know how you like it. Enjoy !!
