Servings: 17-18 medium sized laddus
Cooking Time: 15 minutes
- 2 cups of fresh grated coconut (fresh or frozen any can be used)
- 1 tsp cardamom powder
- 1/2 cup sugar (you can adjust it according to taste)
For this recipe you can use either fresh coconut or frozen fresh grated coconut. Both works well for this recipe. Keep a kadhai/ any pan in low to medium heat, when it is hot enough add grated coconut in it. Through out roasting keep the gas in low to medium heat. We have to roast the grated coconut just a little bit, we do not want to get it brown in color. Stir it continuously so that it do not stick to the bottom of the kadhai.
Roast the coconut for around 5-7 minutes and then add sugar in it. Mix it nicely. Now you can increase the gas to medium heat.
When sugar has nicely dissolved and mixed with the coconut add cardamom powder and mix it again. At this stage you can taste the mixture and adjust the sweetness according to your liking. It will look like the second picture given above. Switch of the gas immediately.
Let the mixture cool down a little bit. When the coconut mixture is little warm and you are able to handle it, take little portion of the mixture and shape it in form of a laddu. Try making laddus when the mixture is warm, it is easy to shape them. You can make laddus of any size as per choice. Like this make rest of the laddus.
