Servings: 14-15 laddus depending upon the size
Cooking Time: 40-45 minutes (except cooling time)
Ingredients:
- 1/2 cup ghee (clarified butter)
- 1.25 cup besan (gram flour)
- 3 tbsp semolina (suji, rava)
- a pinch of turmeric powder (haldi)
- 1/2 cup sugar (slightly grainy powdered sugar)
- 1 tsp cardamom powder
- 2 tbsp almond flakes
- 1 tsp pistachio flakes for garnishing
Procedure:
Take ghee in a heavy bottomed kadhai/pan. Keep the gas on medium heat.
When ghee is hot enough, add gram flour and semolina in it. Quickly stir all the ingredients nicely. The consistency of the mixture should be runny as shown in the second picture above. Always keep the gas on low to medium heat.
Keep on stirring the mixture continuously and roast the flour nicely till it turns light golden brown in color and nice nutty aroma starts coming. Do not increase the heat, always keep the gas on low to medium heat. When the flour will roast slowly on low temperature the flavors will be more intense. It will take around 15-20 minutes.
When flour has been roasted nicely, switch off the gas and keep the kadhai/ pan aside. Now add a pinch of turmeric powder and mix it nicely. Turmeric powder gives nice color to the laddus. Now let the mixture cool down completely. The mixture should be completely cool before we proceed further.
When mixture has cooled down completely, add almond flakes and mix it nicely.
Now we will add sugar in the mixture. You can also use powdered sugar but for the exact taste and texture of besan laddu, little grainy sugar is added. For this take granulated sugar in a grinder jar and pulse it couple of times to get the grainy / coarse sugar. Mix the sugar nicely with the laddu mixture and make it like a dough.
Now take a small portion of laddu mixture and roll it between your palms to shape it like a laddu. Like this make rest of the laddus and keep it on a plate. Do not keep the laddus on absorbent paper or any kind of tissue as these will absorb the ghee making laddus dry. I have used paper cups to keep the laddus.
Finally garnish the laddus with pistachio flakes and super yummy laddus as ready to be enjoyed. These are super delicious and trust me friends you will not stop at one. Keep these laddus in an air tight container. These are good for around a week in room temperature. Try out this recipe this Diwali friends and spread the sweetness with your friends and family.
