Masala Peanuts

Servings: 3.5 cups approx

Cooking Time: 45 minutes

Ingredients:

  • 3 cups raw peanuts
  • 5-6 cloves of garlic
  • 1 tbsp fennel seeds (saunf)
  • Salt to taste
  • 2 tsp red chilli powder (you can adjust it according to taste)
  • 1/4 tsp asafoetida
  • 1 tsp baking soda
  • 1 cup gram flour (besan)
  • 5 tbsp rice flour
  • Water as required
  • Oil for frying

Procedure:

Take raw peanuts,  you can also use roasted peanuts then you do not have to roast the peanuts.

Take peanuts in a kadhai and put it in medium heat. Roast the peanuts for around 8-10 minutes stirring it continuously. Switch of the gas once peanuts are roasted nicely.

Now take garlic cloves and fennel seeds in a grinder jar and pulse it a little without adding water. It will crush the garlic and fennel seeds slightly.

We will now take the roasted peanuts in a deep bowl and add salt, red chilli powder, asafoetida, baking soda and crushed garlic in it. Mix all the ingredients nicely.

Add gram flour and rice flour in it. Mix it nicely.

Sprinkle little water on it and rub them with your fingers. This will make the flours stick to the peanuts and coat them. Do not add too much water. Sprinkle little water as required and keep mixing them.

Once peanuts are coated nicely, fry them in oil till they are light golden brown in color. Take them out on a absorbent paper. Once they cool down completely store them in an air tight container.
