Servings: 20-25 kebabs (depending upon the size of the kebabs)
Cooking Time: 45-50 minutes
Ingredients:
- 4 cups raw jack fruit pieces (chopped into medium sized cubes)
- 1 tbsp ghee (clarified butter)
- 1/4 cup gram flour (besan)
- 5-6 cloves of garlic
- 2 tbsp ginger roughly chopped
- 4-5 green chillies ( adjust it according to taste)
- 1 inch cinnamon
- 2-3 green cardamom
- 2-3 cloves
- Salt to taste
- 1 tsp turmeric powder
- 1 tsp red chilli powder (adjust it according to taste)
- 1 tsp black pepper powder (adjust it according to taste)
- 1 tsp garam masala ( adjust it according to taste)
- 1 tsp chaat masala
- 1 cup onion finely chopped
- 2-3 tbsp coriander finely chopped
- Oil for roasting the kebabs (any refined oil like peanut oil, sunflower oil etc can be used)
Procedure:
Clean and chop the jack fruit nicely. Do it very carefully as it is little tricky to cut and clean the jack fruit. Apply some oil on your hands and knife before cleaning the jack fruit. After cleaning the jack fruit, take it in pressure cooker with little salt and equal quantity of water and pressure cook it for 2-3 whistles. Open the lid only when all the pressure has been naturally released. Jack fruit must be fork tender. Now take boiled jack fruit in a blender jar and pulse it to get little pieces of jack fruit. For kebabs we need shredded kind of texture, not the mashed so be careful while pulsing the jack fruit.
Now take ghee (clarified butter) in a pan and put it on medium heat. When ghee is hot enough add gram flour (besan) and stir it nicely. Keep the gas on low to medium heat. Keep stirring it so that it gets roasted evenly and nicely.
When you start getting the nutty aroma of gram flour and it is light brown in color, then it means it is roasted. Add it to the shredded jack fruit.
Take garlic , ginger, green chillies, cinnamon, cardamom and cloves in a grinder jar and grind it to a smooth paste. Use little water while grinding, do not make very runny paste other wise kebab mixture will become watery and it will be difficult to shape and roast the kebabs. Add the paste to the jack fruit and mix all the ingredients nicely.
Now add salt, turmeric powder, red chilli powder, black pepper powder, garam masala and chaat masala as shown in the picture above. Also add finely chopped onions and coriander. Mix all the ingredients nicely.
Our kebab mixture is ready. Isn’t it looking delicious.
Take small portion of the mixture and shape it in any way you like. I have made them like a tikki or patty . Take a pan and add some oil in it, when it is hot enough add these kebabs and roast them on low to medium heat till they turn golden brown on both the sides. Keep flipping the kebabs so that they roast evenly.
When the kebabs have turned golden brown on both the sides then it means they are done. You can also roast the kebabs on a grill. With grill marks they will look even more pretty.
Serve them hot with Coriander Mint Chutney, Coriander Peanut Chutney, Kebab Dip, Plain old ketchup or any sauce of your choice. These kebabs are very delicious and healthy too. As jack fruit has very low glycemic index, it is really good for all the people having diabetic issues. You can make this mixture and keep it in refrigerator for at least a week and whenever you are hungry or feel like snacking take out little mixture and these kebabs will be ready in no time. You can also make roti wraps with these kebabs. Roll it inside a chapati or roti with some onion, shredded carrots and radish and your meal is sorted.
