Ingredients:
- 1.25 cups greek yogurt/ hung curd
- 3 – 4 tbsp powdered sugar (Adjust it according to taste)
- 1/4 tsp saffron (Kesar)
- 1 tbsp milk
- 1/4 tsp cardamom powder (Elaichi)
- 1 tbsp pistachio pieces
- 1 tbsp cashew pieces
- Few petals of rose for garnishing (optional)
Procedure:
Get all the ingredients ready for making shrikhand. For shrikhand we need very thick yogurt/ curd for which we will use greek yogurt means hung curd. You can also make hung curd at home, by tying curd in a muslin cloth for at least 4-5 hours. Also soak saffron in little warm milk till it releases its color.
Add sugar in yogurt/curd and mix it nicely. Give it a taste after mixing and adjust sugar according to taste.
Now add saffron soaked in milk and cardamom powder. Mix it nicely.
Then add pistachio and cashew pieces and stir well. Delicious kesar elaichi shrikhand is ready to be enjoyed. Keep it in refrigerator for an hour or so till it gets chilled. If you want to serve it immediately then use chilled yogurt. It taste best when it is chilled.
Pour shrikhand in a serving bowl and garnish with saffron, pistachio pieces, cashew pieces and rose petals. It is good in refrigerator for 2-3 days. You can also make this a day ahead if you are having guest the next day. This is a super simple desert with amazing flavors which hardly takes any time to prepare. You can also serve this in clay pots which will add on to the flavors of this delicious shrikhand. Shrikhand can also be made using 2% or low fat greek yogurt and you can substitute sugar with sugar free or truvia or any sweetener of your choice. This is a perfect light desert for hot summers when we don’t feel like having anything too sugary or heavy. Do try this out friends and please let me know how you like it. Enjoy !!
