Vegetable Kebab

Servings: 20-25 Kebabs depending on the size

Cooking Time: 40 minutes

Ingredients:

  • 1 cup cauliflower florets
  • 1 cup green beans roughly chopped
  • 1 cup carrots diced
  • 1/2 cup beats diced
  • 1 medium / 2 small sized potato boiled
  • 1/2 cup onion finely chopped
  •  3 – 4 cloves of garlic grated
  • 2 tbsp coriander finely chopped
  • 2 tbsp mint leaves finely chopped
  • Salt to taste
  • 1 tsp red chilli powder (you can adjust it according to taste)
  • 1/2 tsp black pepper powder (you can adjust it according to taste)
  • 1 tsp roasted cumin powder
  • 1 tsp garam masala
  • 1 tsp chaat masala
  • 1/2 cup paneer grated
  • 1/4 cup powdered oats
  • Oil for shallow frying the kebabs

Procedure:

Get all the veggies ready.

 

 

Boil water in a pan and when water starts boiling add veggies in it. Boil it till veggies become little soft. Veggies should not very soft, just par boiled. It will take around 10 minutes. After it is boiled sieve it with help of a colander and keep it on a plate to cool down a little bit.

Then take little veggies in batches and pulse it in a blender. We do not have to make it like a paste, little chunks of veggies should be there. Use very little water if required. If the veggies will become watery then we have to add lots of binder in it to bind and then the kebabs will not turn out soft. It will become hard from inside.

 

 

Grate the boiled potatoes and add it to veggie mixture. Mix it nicely.

 

 

Now add finely chopped onion, grated garlic, finely chop coriander and mint leaves. Mix all the ingredients nicely.

 

 

Then add salt, red chilli powder, roasted cumin powder, black pepper powder, garam masala and chaat masala. Also stir in the grated paneer. Mix all the spices and paneer nicely.

 

 

Finally add powdered oats and mix it nicely with the rest of the ingredients. Then take little kebab mixture in hand and see whether you are able to shape it in form of a tikki or not. If you are finding difficulty then add little more oats and then check again. I have used only 1/4 cup oats and kebabs were very soft after roasting, so try to add as little binder as possible. Kebab mixture will look like the second picture given above once it is ready.

 

Now take little portion of the mixture and shape it in form of tikki or flat patty (you can shape it in any shape of your choice). Take a pan and add little oil in it and when oil is hot enough place the kebabs slowly on it. Keep the gas on medium flame. Slowly cook the kebabs till they are golden brown from the sides. Use a flat spatula to turn the kebabs. Like this make rest of the kebabs. You can also make this kebab on a grill or tava.

Super delicious and healthy Vegetable kebabs are ready to be enjoyed with your friends and family. Serve it hot with Kebab Dip or coriander chutney or plain old ketchup. You can also make this kebab mixture and keep in your refrigerator and when ever you feel like having just roast some for your self. The kebab mixture is good for a week in refrigerator. You can also make sandwich with this kebab. Just apply little ketchup or chutney on two slices of bread and press this kebab in between them. Then roast them from both the sides by applying butter. This is a fun way to make your kids eat the veggies and paneer all together. Just reduce the spice according to them. This is also a perfect party appetizer. You can make the kebab mixture ahead of time and keep in the refrigerator. So friends do try out this recipe and please let me know how you like it. Enjoy !!

How to make powdered oats – Take normal rolled oats in your grinder jar and grind till it becomes a powder, Isn’t it so simple.
