Baked Sweet Potato in Soy Ginger Sauce

Servings: 2

Cooking Time: 30 minutes

Ingredients:

  • 1 big / 2 medium sized sweet potato peeled and sliced
  • 2-3 tbsp soy sauce
  • Salt to taste
  • 1 tsp garlic powder
  • 1 tbsp ginger grated
  • 1/2 tsp black pepper powder
  • 1 tbsp brown sugar
  • 1 tsp red chilli flakes (you can adjust it according to taste)
  • Cooking Spray/ 1 tbsp oil to grease the baking tray

Procedure:

Take peeled and sliced sweet potato in a deep bowl.

In another bowl take soy sauce and add salt, garlic powder, black pepper powder, grated ginger, brown sugar and red chilli flakes ( Be a little light handed while adding salt as soy sauce also contains salt). Mix all the ingredients nicely. Taste the sauce and adjust the spices according to your taste.

Now add the sauce to the sweet potatoes and mix nicely so that all the slices are coated nicely with the sauce. Now cover the bowl and keep it in the refrigerator for at least 30 minutes.

Prepare a baking tray by lining it with aluminium foil and greasing it with cooking spray or any oil. Now arrange the sweet potatoes in a single layer on the tray, so that it gets baked evenly. Reserve any extra sauce remaining in the bowl, we will use it later to brush over the sweet potatoes again.

Pre heat oven at 350 degree fahrenhite or 180 degree celsius for 10 minutes and then bake the sweet potatoes till it is fork tender. It will take around 20-25 minutes for the sweet potatoes to bake completely.

After 10-15 minutes take out the tray and invert the sweet potatoes and brush the extra sauce remaining in the bowl. Bake till it is completely done.

Delicious baked sweet potatoes in soy ginger sauce is ready. Serve it hot with coriander curd dip or any sauce of your choice. It is super yummy and very low in calories.
