Soak the peas in water for at least 4-5 hours, then rinse it nicely.
Take the soaked peas in pressure cooker, add 3 cups of water, salt, turmeric powder and orange food color.Close the lid and pressure cook it up to 2-3 whistles only.Do not over cook it other wise the peas will become very soft and mushy. Open the lid only when the pressure escapes naturally. If the peas are not cooked then pressure cook it again only up to 1 whistle.
After boiling ,the peas should look like the picture given above. The peas should be whole not very soft and mushy.
Now take ginger and garlic in a blender jar and blend it to a smooth paste using little water as required.
Take oil in a deep pan or kadhai,
when oil is hot enough then add ginger garlic paste in it and saute it for about a minute or so till the raw aroma of ginger and garlic escapes.
Now as ginger and garlic is cooked properly stir in the boiled peas, add red chilli powder and garam masala in it.Mix it nicely.Let the ghugni simmer on medium heat for about 5-7 minutes.
