Rajasthani Plain Kadhi

Servings: 2-3

Cooking Time: 30 minutes

Ingredients:

  • 1 cup sour plain yogurt/curd ( khatta dahi)
  • 3 tbsp gram flour (besan)
  • 2 cups water
  • 1 tsp red chilli powder
  • 2 tbsp refined oil
  • 1/4 tsp fenugreek seeds (methi dana)
  • 1/4 tsp fennel seeds (saunf)
  • 1/4 tsp mustard seeds (sarso or rai)
  • 1/2 tsp cumin seeds (jeera)
  • 2 pinch asafoetida (hing)
  • 2 whole dry red chillies
  • 1/4 tsp turmeric powder (haldi)
  • Salt to taste
  • 1 tbsp coriander finely chopped for garnishing

Procedure:

Step 1: In a deep bowl combine curd,water and gram flour and whisk nicely until there is no lumps in the mixture.Add in red chilli powder and mix again.We are adding red chilli powder in this stage as this gives a very nice color to the kadhi.

Step 2: Take a deep kadhai and add oil to it.When oil is hot enough then add whole dry red chillies (break it into four pieces),asafoetida,fenugreek seeds, mustard seeds, fennel seeds and cumin seeds.When the seeds starts turning brown then add in the curd mixture prepared in step 1.Give it a good stir and add salt and turmeric poweder

Step 3: Now keep boiling the kadhai on medium heat for around 10-15 minutes till the gram flour cooks and the kadhi thickens a little bit.The consistency of kadhi is neither too thick nor thin.When the gram flour has cooked and kadhi is thicken a little bit,then give it a taste,adjust the salt and switch off the heat.Garnish with finely chopped coriander and serve with roti,paratha,steamed white rice or jeera rice or any bread of your choice.Do try this super easy and flavor full Rajasthani Plain Kadhi and let me know how you like it.Enjoy !!

Handy Tip:

If curd is not very sour then to have perfect sour kadhi you can add little bit of dry mango powder according to taste.
