Servings: Approx 30 pieces depending upon size
Cooking Time: 45 minutes
Ingredients:
For Vada-
- 1/2 cup urad daal (split)
- 3-4 green chillies (you can adjust it according to taste)
- 1 inch ginger roughly chopped
- 1/2 tbsp salt
- Oil to deep fry
For Dahi-
- 2 cups thick plain yogurt/curd
- Salt to taste
- 1 tbsp sugar
- 1 cup water
For Serving –
- Coriander Chutney
- Sweet tamarind chutney
- Roasted cumin powder
- Salt
- Black salt
- Red chilli powder
Procedure:
Step 1: Take 1/2 cup urad daal in a deep bowl and soak it in water for at least 4 hours.
Step 2: After 4 hours rinse the daal properly by changing water at least 4-5 times.
Step 3: Then combine daal,green chillies and ginger in a blender jar and blend it into smooth paste.Use very little water while grinding.The paste should be thick.Add Salt and stir the batter briskly for couple of minutes.This makes the batter light and fluffy.
Step 4: Heat Sufficient oil in a deep kadhai and when oil is hot enough then take little batter in your hand or in spoon and drop in oil slowly.Drop in around 5-6 vadas at a time depending upon the size of kadhai.
Step 5: Do not turn the vadas quickly.Let it fry slowly and when you see it turning little golden from the base and sides then turn it over.Deep fry them till they are golden brown in color,then take it out on absorbent paper and keep aside.Like this make vadas with rest of the batter.
Step 6: When vadas have cooled completely we will soak them in water.Take water in a deep big bowl,water should be just enough for the vadas to soak completely.Now soak them for around 20-30 minutes.
Step 7: In the mean while we will prepare curd mixture for vadas. We will sieve curd to get the smooth consistency.Add water,salt and sugar in the curd and mix nicely.
Step 8: After 20-30 minutes take one vada at a time and press gently between your palms to remove the excess water and place it in the curd mixture.Like this do with all the vadas. Keep this in refrigerator in a closed box for at least an hour before serving.
Step 9: For serving take dahi vada in a bowl and top it with sweet tamarind chutney, coriander chutney,salt,black salt,red chilli powder and roasted cumin powder as required and serve.Enjoy this super yummy dahi vada with your family in any festival or occasion or any time and let me know how you like it. Dahi and Vada mixture is good for about 4-5 days if kept in closed box in refrigerator.Enjoy !!
