Veg Flower Pots

Servings: 18 Veg flower pots

Cooking Time: 1 hour

Ingredients:

For the filing –

  • 2 cups paneer chopped into small cubes (around 500 gm/1 pound)
  • 1 cup onion finely chopped (1 big onion)
  • 1/4 cup red bell pepper chopped into small cubes (optional)
  • 1/4 cup green bell pepper chopped into small cubes
  • 1/4 cup carrots finely chopped( 2 small carrots)
  • 1 tbsp ginger garlic paste
  • 4-5 green chillies finely chopped (you can adjust it according to taste)
  • 2 tbsp oil
  • Salt to taste
  • 1 tsp red chilli powder (you can adjust it according to taste)
  • 1 tsp kashmiri red chilli powder (optional)
  • 1 tsp black pepper powder
  • 2 tsp garam masala(you can adjust it according to taste,if you want less spicy)
  • 2 tbsp tomato ketchup

Other –

  • 1 pack puff pastry sheets
  • 1 cup grated mozzarella cheese
  • Coriander for garnishing
  • Oil for greasing the muffin pan
  • 4 tbsp all purpose flour for dusting the muffin pan (maida)
  • 2 tbsp all purpose flour for rolling the puff pastry sheets(maida)

Procedure:

Step 1: We will start with making the filing for the flower pots.Take a deep pan/kadhai and add oil to it.When oil is hot enough then add ginger garlic paste to it and saute it for about a minute.Now add green chilies and onion to it and stir it nicely.Cook it for about a minute then add chopped bell peppers,carrots,salt,red chilli powder,kashmiri red chilli powder,black pepper powder,garam masala and mix it nicely.Keep the gas on medium heat.Cover and cook it for about 5-7 minutes till all the veggies are soft and tender.

Step 2: When all the veggies have cooked then add cubes of paneer and tomato ketchup and mix very gently so that paneer do not crumble.Switch off the heat and keep it aside.

Step 3: Now we will proceed with making pots with puff pastry sheets.Puff pastry sheets should always be kept in freezer,so before making this we have to bring the puff pastry sheets to room temperature.So as you start preparing for the paneer filing keep the sheets outside,it takes around 30-40 minutes for it to come to room temperature.

Step 4: The sheets should be still cold when you start handling it because then only our pots will be crispy and  flaky. Spread some flour on a clean surface and place one sheet on it then roll it a little bit with help of a rolling pin.Do not roll it very thin just roll it a little bit.Then with a help of a sharp knife cut the whole sheet into nine equal parts. Then take one part and again roll it a little bit.It should be as i have demonstrated in the picture below.

Step 5: In the mean time pre heat the oven at 200 degree Celsius or 400 degrees Fahrenheit for around 10 minutes.When all the 9 parts of sheet is rolled then take a muffin pan and grease it will oil and dust with flour.We do this so that the puff pastry sheets do not stick to the pan.

Step 6: Now place one part of rolled sheet in one muffin hole and press it from all side to give it a shape like a bowl as shown below:

Like this place all the nine parts in the muffin tray and put it inside the oven and bake it for about 4-5 minutes.Check after five minute,you will see that all the corners have come together and it has formed like a flower and it has puffed up a little bit.If it has not puffed up or formed as flower after 5 minutes then bake for 2-3 minutes more and check immediately.

Step 7: Now take it out and with a help of spoon,fill the paneer filing nicely in the middle of the flowers.Then top it up with some grated cheese.

Step 8: When all the pots are filled and topped nicely then again put it inside the oven and bake till it is golden brown in color and cheese has melted.Then take it out of oven and garnish with coriander.Like this make more veg flower pots with remaining puff pastry sheet.Serve it with ketchup.Super easy veg flower pots are ready to be enjoyed.

This is a very good party/potluck item.From one pack of puff pastry sheets you will easily get 18 veg flower pots. You can also add mushrooms,corn and beans in it.Also it can be made of only different veggies without paneer.
