Ingredients:
- 1 cup grated / crumbled Mawa (Khoya)
- 1/2 cup pistachio (unsalted)
- 2 tbsp ghee (clarified butter)
- 1 tsp cardamom powder (elaichi powder)
- 1 pinch green food color (optional)
- 1 pinch yellow food color (optional)
- 1/2 tsp saffron (kesar)
- 6 tbsp powdered sugar
- 1 tbsp almonds sliced for garnishing
- Edible rose petals for garnishing (optional)
Procedure:
Take 1 cup crumbled mawa and 1/2 cup pistachios. Grind pistachio to fine powder.
Take powdered pistachio on a plate, add 1/2 tsp cardamom powder, pinch of green food color and 2 tbsp powdered sugar. Mix all the ingredients nicely.
Take a non stick pan and add 1 tbsp ghee in it. When ghee is little hot add the pistachio mixture and stir it nicely till sugar has melted and well combined with the pistachio powder. Take it out on a plate and keep it aside. Our pistachio layer is ready.
Now for the Mawa layer take 1 tbsp ghee in another pan and when ghee is little hot, add mawa and stir it nicely.
Now add 4 tbsp powdered sugar, 1/2 tsp cardamom powder, 1/2 tsp saffron and a pinch of yellow food color dissolved in water. Mix all the ingredients very nicely till sugar has melted and well combined. I prefer my sweets to be little less sweet, if you want more sweet then add more sugar to the mixture. Our mawa layer is also ready and now just we have to assemble the burfi.
I have taken a square box, you can take any utensil or box of your choice. Grease the box with little ghee and first of all pour the mawa mixture in it and then level it with back of the spoon. Then top the mawa layer with the pistachio mixture and carefully with a light hand spread the pistachio layer evenly all over the mawa layer.
Garnish the burfi with sliced almonds and rose petals. Press the almonds and rose petals little with your hands so that they stick to the burfi and won’t come out while serving. Now cover the box and keep it in the refrigerator for 30 minutes.
Take out the box after 30 minutes and invert it on plate carefully. Now you can see beautiful two layers of mawa and pistachio marrying into each other. Slice the burfi into equal pieces and serve.

in u.S. California. We had Indian stores but I dont know how fresh their mawa will be.

I also buy nanak mawa, packaged one…I have used it number of times. It is quite good. M in chicago..this is the best what we can get here in US
