Badam Ka Halwa

Servings:  a medium bowl, serves 4-5

Cooking Time: 1 hr approx

Ingredients:

  • 1/2 cup almonds (badam)
  • 1/2 cup + 2 tbsp ghee (clarified butter)
  • 3 tbsp whole wheat flour
  • 1 + 1/2 cup milk (Whole milk is preferred)
  • 1/2 cup sugar

Procedure:

Take almonds in a deep bowl and soak it in water for at least 6 – 7 hours or over night. If you have forgotten to soak it over night then soak it in hot water for at least 4 – 5 hours. The almonds should be nicely soaked for perfect texture and taste.

Peel the skin of the almonds and clean it. Now take the almonds in a grinder jar and grind it to a smooth paste. Use very little water while grinding. If the paste will become more watery then it will take more time to reduce and roast. The almond paste should be very smooth in texture.

Take 1/2 cup ghee in a heavy bottom kadhai and when ghee is hot enough add almond paste in it. Keep the gas on medium heat.

Stir it nicely and mix the almond paste with ghee. Always keep the gas on medium heat, do not increase the temperature, in high heat it will roast fast but you will not get the required taste. When it roast on low heat, the flavors are amazing and finger licking good. Slowly the almond paste will thicken as shown in the second picture above. Keep stirring it continuously.

The above pictures illustrates the stages while roasting the almond paste, at one stage it will start sticking to the kadhai but stir it continuously and add 2 tbsp ghee in it. Slowly as it will roast, it will stop sticking to the kadhai and starts releasing ghee from the sides.

We have to roast it till it turns slight golden brown in color and starts leaving ghee from the sides. It will look like the picture given above.

Now we will add wheat flour in it and roast it till it turns golden brown in color. Keep the gas on medium heat and stir it continuously.

As it starts leaving ghee from the sides then it means it is roasted nicely. We will not roast it more because it will again roast after adding milk so if it turns more brown at this stage then we will not be able to get beautiful golden color at the end. After roasting  it will look like the picture given above.

As almond paste is roasted nicely, add milk in it ( Try to use whole milk for better taste and texture). Mix it nicely. Keep the gas on slow to medium flame.

Now we have to keep roasting it till milk is completely reduced and absorbed. The above pictures illustrates the different texture of halwa while roasting and reducing. Always keep stirring it continuously.

Badam ka Halwa 18

When the milk is completely reduced and it starts leaving ghee from the sides, then it means it has been roasted completely. At this stage lots of ghee will come out of the halwa and if you feel it is too much for you then feel free to take out some of the ghee with a spoon. Do not take out all of the ghee otherwise the halwa can become dry. You can use this ghee again to make any other sweet or just smear it on parathas or chapatis. After roasting completely it will look like the second picture given above.

Now add sugar and mix it nicely and stir it continuously till it is completely dissolved in the halwa. After adding sugar do not stir more that 4-5 minutes, just stir till sugar dissolves, then switch off the gas immediately. Super delicious and healthy Badam Halwa is ready to be enjoyed.

Badam ka Halwa 21

This is one of my favorite desert, it is super delicious. I have learnt this from my grandmother and mom. My grandmother always used to make this halwa during winters and used to give us 2 tbsp of this halwa everyday with other breakfast. This halwa is super healthy as it contains all the goodness of almonds and ghee. This halwa is good for at least a month in refrigerator. Whenever you want to have it just take out a little, warm it for around 20 seconds in microwave and enjoy. Who do not use microwave you can also enjoy this just by heating it on slow heat on the gas, heat it little bit only otherwise it can burn. It is also very healthy for the women who have just delivered their babies. This halwa is all the worth of efforts. So friends do try out this recipe and please let me know how you like it. Enjoy !!
