Servings: 15 – 16 cookies
Cooking Time: 45 minutes
- 2 bananas (riped)
- 1 cup oats
- 1/3 cup apple sauce
- 1 tsp vanilla
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 cup powdered sugar
- 1/4 cup dried cranberry (crasinis)
- 2 tbsp tutti fruity (dried papaya candies)
Take 2 riped banana in a deep bowl and mash it nicely with help of a fork.
Add 1 cup oats to the mashed banana.
Now add 1/3 cup apple sauce and mix all the ingredients nicely.
Add vanilla, cinnamon, nutmeg and sugar. Mix it nicely.
Finally add in dried cranberries and tutti fruity. Stir it nicely.
Our cookie batter is ready to be baked. Pre heat oven at 325 degrees fahrenhite or 160 degrees celsius.
Line a baking tray with parchment paper or aluminium foil and grease it with oil or cooking spray nicely. Scoop out cookies on the tray with help of a spoon and flatten it a little bit ( Cookies will look just as you have placed them on the baking tray and won’t spread or change at all after baking). Now bake the cookies at 325 degrees fahrenhite or 160 degrees celsius for 30 -35 minutes and then pull it out of the oven and let it cool for around 10-15 minutes on the baking tray and then take off from the tray and place on a cooling rack. Take them out of the baking tray very carefully as these cookies are very soft and gooey.
When the cookies are completely cooled, keep them in an air tight jar. These are good for about a week. Delicious Banana Oats Cookies are ready to be enjoyed. These cookies are very healthy as these are flour less and diabetic friendly too. Substitute sugar with 2 tbsp of truvia for more healthier cookies. You can also use brown sugar, just the cookies will be more darker in color due to brown sugar. Do try these out friends and please let me know how you like it. Enjoy !!
Handy Tip –
- Homemade applesauce – Making applesauce at home is very simple. For this recipe just take 1 apple and peel it. Chop it roughly into big chunks and take out the core. Take around 1.5 cups of water in a pan and bring it to boil. When water starts boiling add in the apple chunks and let it boil till it gets very soft. Traditionally cinnamon sticks and sugar is also added in the apple sauce while it is boiling but I have not added sugar or cinnamon while making apple sauce for this recipe. When apple has boiled nicely and is very soft, switch off the gas and let it cool for sometime. Discard excess water in the pan and take boiled apples in a blender jar and blend it to a smooth paste. Apple sauce is ready to be used in any recipe or be enjoyed as it is. Apple sauce is very healthy for the kids as well.
- For making cookies as diabetic friendly, substitute sugar with 2 tbsp truvia . Do not add more truvia as it can given bitter taste.
