For veggie patty-
- 1 cup whole black gram boiled (Kala chana) (Please refer image below as it is known in different names in different places) (optional)
- 1 cup or 1 big potato boiled and mashed
- 1.5 cups carrots grated
- 1 cup onion finely chopped
- 1/2 cup beans finely chopped
- 2 tbsp ginger garlic and green chilli paste (you can adjust it according to taste and spice level)
- 2 tbsp mint finely chopped
- Salt to taste
- 1 tsp red chilli powder (you can adjust it according to taste)
- 1 tsp black pepper powder (you can adjust it according to taste)
- 1 tsp garam masala (you can adjust it according to taste and spice level)
- Bread crumbs as required
- Oil for roasting the patties
- 4-5 tomato slices
- 4-5 onion slices
- Few Pickled jalapenos (optional)
- Butter for toasting the burger bun
- Sweet Chilli sauce /tomato ketchup
- Cheese Slices ( You can use any cheese as per choice,I used pepper jack)
- Salt to taste
- Black Pepper to taste
Soak the whole black gram for at least 4-5 hours or over night and then boil it with little bit of salt and turmeric.After it cools down a little bit, sieve it with a help of a colander and drain out all the excess water. Now take the boiled black gram in a blender jar and blend it to smooth paste.Use very little water while grinding.The paste should not be thin and runny.
Get all the ingredients ready for the veggie patty.
In a deep bowl add carrots, beans, onions, mashed potato and black gram paste.
Now add salt, red chilli powder, black pepper powder, garam masala, ginger garlic and green chilli paste and finely chopped mint in it.
Mix all the ingredients very nicely.If you feel that the mixture is little thin or runny then you can add little bit of bread crumbs in it but don’t add too much otherwise the patty will get dry after roasting.It will not be moist from inside.
Now make four big burgers out of the patty mixture.
Take bread crumbs in a plate and place the patty over it and cover the patty nicely with bread crumbs.Like this cover rest of the patty with the bread crumbs. (If you want you can also dip the patty in flour water mixture and then cover them with bread crumbs)This patty is moist in itself so i didn’t feel the need to dip them in flour water mixture.
Heat a non stick pan and add all the four patties in it.Sprinkle little bit oil over the patties and around it.Let it roast on medium heat so that the outside gets crispy. Flip the patties very gently using a flat spatula so that it do not break.
Roast the patties nicely till it gets golden brown in color.It will look like the picture shown above. When it is done.take it out on a plate and keep it aside.
Get the veggies ready for assembling the burger.
Apply butter generously on the buns and toast it on the same pan in which we have roasted the patties. Toast the buns till they are golden brown and crispy.
When the buns have toasted nicely take the bottom part of the bun and lay it on a clean plate or surface. Smear some sweet chilli sauce on it.You can add this as per your taste.
Now top it with a slice of cheese and then with a slice of onion,tomato and some pickled jalapenos. Then sprinkle some salt and pepper on it.
Now top it again with a slice of cheese (this is optional),smear the top bun again with some sweet chilli sauce and then close the burger. Insert one big tooth pick in the center of the burger so that it holds everything nicely.
Now place the whole burger on the pan and close the lid of the pan.Keep the gas on medium heat.We do this so that cheese melts a little bit and the burger is nice and warm. When cheese has melted then its done.It takes not more that 2-3 minutes for the cheese to melt.
Mouthwatering Veggie patty burger is ready to be served with all favorite fries and coke.
Delicious burger is ready in no time in your own kitchen.This is healthy too as it has lots of veggies and black gram in it and patty is also roasted in very less oil.You can also add finely shredded cabbage in the patty mixture.You can also give this in your kids lunch box. To make it more healthy substitute white bread bun with whole wheat bun.If you don’t have bun then also you can try this by sandwiching the patty between the regular bread.
