Servings: 6-7 medium sized crepes
Cooking Time: 45 minutes
Ingredients:
- 1 cup moong daal (split green gram)
- 1 tbsp ginger roughly chopped
- 3-4 green chillies (you can adjust it according to taste)
- 1/2 tsp carom seeds (ajwain)
- 1 tsp red chilli powder (you can adjust it according to taste)
- Salt to taste
- Refined Oil for cooking the crepes (vegetable,canola or peanut any can be used)
Procedure:
Take moong daal in a deep bowl,add water in it and soak it for at least 4 -5 hours.
When daal is soaked properly then rinse it nicely by changing water at least 3-4 times. Then take it in a blender jar, add ginger and green chillies and grind it to a smooth paste using water as required. If you are using small blender then blend it in two batches.
The batter should neither be very thin nor thick.It should be of medium consistency like dosa batter.
Now add salt,red chilli powder and carom seeds to batter and mix it very nicely.Batter is ready to be turned into delicious crepes.
Heat a tawa or non stick pan on medium heat.When tawa is hot enough(you can check whether tawa is hot or not by sprinkling some water on it,if water starts sizzling as soon as you sprinkle then it means tawa is ready to make the crepes) then with help of spoon spread one spoon (around 1/4 cup) (this is for making small crepes,if you want to make big crepes then add 2-3 spoon (around 1/2 cup) and here spoon means big spoon which we use for cooking or serving) of batter on tawa. Then add around 1 tsp oil in the corners of the crepes, add oil around whole circumference of crepes.
Keep the heat on medium only.If you increase the heat then it will cook fast but the inside can remain raw and it will not be crunchy also.Let it cook completely from one side,after 4-5 minutes with the help of flat spatula turn it over to the other side and cook it by adding some more oil if needed.If you use non stick pan or tawa then you can make one crepe with less than 1 tsp oil.
When the crepes are golden brown from both the sides then take it out on a plate.Like this make more crepes with rest of the batter.Serve it warm with garlic chutney , coriander chutney and ketchup.
These are very delicious and super easy to make and fit for any time whether it is a breakfast, or lunch or dinner and even as a snack.This is also a quick recipe for your kids lunch box,just reduce the heat level.You can make the batter ahead of time and keep in refrigerator.
