Nimki / Namak Para

Cooking Time: 45 minutes

Ingredients:

  • 3 cups all purpose flour
  • 1/2 cup refined oil for the dough
  • Salt to taste
  • 1 tsp carom seeds (ajwain)
  • Warm water as required
  • Oil for frying

Procedure:

Nimki 1

Take all purpose flour in a deep bowl.

Add salt and carom seeds in it.

Nimki 3

Take oil in a bowl and warm it up a little bit.

Mix the flour,salt and carom seeds nicely and add warm oil in it.

Now mix it nicely with your hands and it should be like bread crumbs.

Now knead it into a stiff/tight dough using warm water as required.Then cover and keep it aside for around 15-20 mins.

After 20 mins take the dough on a clean surface and then knead it for at least 5 minutes so that it becomes easy to work with it.Divide the dough into four equal balls.

Sprinkle 1 tsp oil on the surface and roll it into a thin circle of around 1/2 inch thickness.The idea of using oil instead of flour for rolling is that while frying, the oil remains clean and you won’t see dark burnt particles of flour inside the oil.

Then with a help of a knife or pizza cutter cut the circle vertically into thin strips and then cut it horizontally to get the nimkis. You can cut it into any size of your choice.

Take oil in a deep kadhai and when oil is hot enough add the cut nimki dough in it and fry on medium heat till it is golden brown in color.Keep the gas on medium only,do not increase the heat otherwise nimki can remain raw from inside.When nimki has turned golden brown then take it out on absorbent paper.Like this make more nimkis from rest of the dough.

Yummy nimkis are ready to be enjoyed with a hot cup of tea or coffee.Store it in an air tight container.It is good for around 15 days.It is a very good snack item to take when you are going out for couple of days.You can also give this in your kids lunch box along with some other item.Do try this and let me know how you like it.Enjoy !!
