Cooking Time: 30 minutes
- 3 cups pumpkin (chopped into medium sized cubes)
- 1 tbsp refined oil
- 2 whole dry red chillies
- 1/4 tsp fenugreek seeds (methi)
- 1/4 tsp fennel seeds (saunf)
- 1/4 tsp cumin seeds (jeera)
- Salt to taste
- 1 tsp turmeric powder (haldi)
- 1 tsp red chilli powder (you can adjust it according to taste)
- 1 tsp coriander powder (dhaniya)
- 1 tbsp sugar
- 2 tsp dry mango powder (amchur powder)
- Water as required
Get all the ingredients ready
Take oil in a deep kadhai/pan.
When oil is hot enough then add whole dry red chillies,fenugreek seeds,fennel seeds and cumin seeds in it.
As the seeds starts turning brown add chopped pumpkin in it and stir nicely.
Now add in salt,turmeric powder,red chilli powder,coriander powder,sugar and dry mango powder
and mix all the spices nicely with the pumpkin.
When all the spices are mixed properly then add little bit water approx 1/4 cup and stir it.Now cover and cook the curry for about 15 minutes.Keep stirring in between so that it do not stick to the bottom of pan/kadhai. If the curry becomes dry while cooking add some more water in it and cook till the pumpkin is soft and cooked properly.
When the pumpkin starts cooking then stir the curry gently otherwise it will get mushy.When the pumpkin is cooked then give it a taste,adjust the salt and spices and your super easy and flavorful pumpkin curry is ready in no time.Serve it hot with Chapati (roti), paratha or any bread of your choice.Do try this and let me know how you like it.Enjoy!!
