Sooji ka Halwa

Ingredients:

  • 1 cup sooji
  • 4 tbsp ghee
  • 1 tsp cardamom powder
  • 1 tbsp cashew chopped into big chunks
  • 1 tbsp raisins
  • 1 cup hot water
  • 1/4 cup sugar (if you want more sweeter halwa,you can add more)

Procedure:

Step 1: Take ghee in a kadhai and when ghee is hot enough, add sooji in it.Keep the gas in medium heat.Keep stirring the sooji continuously.In this halwa recipe we have to continuously stir it to retain the beautiful white color of sooji and in the same time to cook it properly.

Step 2: When sooji will start leaving the sides of kadhai,then it is roasted properly.It will take around 15-20 minutes.Always keep the gas on medium heat.Add cardamom powder,cashew and raisins and then roast for another 5 minutes on low heat.We do this to roast the cashews and raisins.Roasted cashew and raisins taste better in this halwa.

Step 3: In the mean time boil the water.When sooji has been roasted properly then add boiling water to it and stir quickly so that no lumps is formed.Add sugar and stir nicely to incorporate all the sugar in the sooji. Ultra delicious sooji halwa is ready to be enjoyed.It taste best when it is warm.Enjoy !!

Handy Tip:

If you want,you can also make this halwa ahead of time and store in an air tight container and refrigerate it.When ever you want to relish it,just warm it in  a kadhai or microwave.Just heat it for 40-50 seconds in microwave.

While making any kind of halwa if you feel that halwa is little stif then add little hot water in it and stir nicely. Halwa will be soft and ready to be enjoyed. Halwa always becomes stiff/hard due to short of water in it.
