Ingredients:
- 1.5 cup whole wheat flour
- 3 tbsp ghee for dough
- 1/4 cup powdered sugar (you can adjust according to taste)
- 1 cardamom/1 tsp cardamom powder
- Ghee for frying
- 1/4 cup water for kneading the dough
- 1 tbsp pistachio and almond flakes for garnishing
Procedure:
Step 1: First of all we will make dough for churma. In a deep bowl combine whole wheat flour and ghee and mix nicely.Then using little water as required knead a stiff dough.The dough should be very stiff.Now cover the dough and let it rest for around 10-15 minutes.
Step 2: Now take dough and make small muthri out of it as shown in the picture below.Do not make big muthri as it will not fry properly and can remain raw from inside.
Step 3: Take ghee in a kadhai for deep frying the muthris. When ghee is hot enough then drop 3-4 muthri at a time and fry in a low flame.Frying muthri for churma takes little time but it is worth it.When we fry in low flame then the muthri is cooked well from inside and it becomes very crunchy from outside which gives it much better flavor.
Step 4: Deep fry muthris until it is golden brown in color.Take it out on a plate and keep it aside.Like this fry rest of the muthris.
Step 5: When all the muthris have been fried,then let it cool a little bit. Break the muthris a little bit with hand and take them in a blender jar and then grind them nicely.Add cardamom while grinding the churma. If you are using whole cardamom then it will grind nicely along with churma.
Step 6: In the same kadhai in which you have fried the muthris, take out excess ghee from it,leaving 2 tbsp ghee in it. Place the kadhai on medium heat, when ghee is little hot then add the grinded churma in it and stir continuously. Roast it for about 5-7 minutes stirring continuously. Take out the churma in a plate and let it cool.When churma has cooled nicely then add powdered sugar in it.Mix nicely.Take it out in a bowl and garnish with pistachio and almond flakes and serve.The authentic rajasthani churma is ready to be relished with daal and bati.Enjoy !!
