Salt and Pepper Crispy Corn

Ingredients:

  • 2 cups american sweet corn
  • 1/4 cup rice flour
  • 1/4 cup corn flour
  • 2 tbsp all purpose flour
  • 1 tbsp pepper (freshly grounded is preferred)
  • salt to taste
  • Refined oil for frying

Procedure:

Step 1: Take sweet corn in a deep blow.If you are using packaged corn then take it out from refrigerator and let it come to room temperature and sieve it if any water is there.

Step 2: Add rice flour,corn flour and all purpose flour to the corn.Mix nicely so that all the corn is nicely coated.After adding the flours the texture should be dry,it shouldn’t be soggy,if required add more corn flour.

Step 3: Heat oil in a deep kadhai and when oil is hot enough then add some of the corns in the oil.Be very careful while adding the corn in the oil as it may burst in the hot oil and hit your face.Do it from a little distance.Keep stirring in between.

Step 4: When corn starts floating on the surface of the oil,then it means that they are done.Take it out on absorbent paper.Deep fry rest of the corn in 2-3 batches.

Step 5: Add salt and pepper to the fried corn and serve with any drink ( Mint Masti,Cranberry fizz,Ginger Lemonade etc of your choice.Enjoy !!

Handy Tip:

You can also make this recipe with little bit of variation like after frying the corns take 1 tbsp oil in different kadhai and when oil is hot enough then add 1 tsp finely chopped garlic,1 tsp finely chopped ginger,1 tsp finely chopped green chilies and 1/4 cup green onion,saute it for about 2 minutes and then add the fried corns,salt and pepper.Stir it nicely and serve.
