Kesar Peda

Servings: 6 medium sized peda

Cooking Time: 1hr

Ingredients:

  • 3 cups whole milk
  • 1/4 cup sugar
  • 1 tsp cardamom powder
  • Few saffron strands
  • 1 tsp ghee (clarified butter)
  • Pistachio flakes for garnishing

Procedure:

Step 1: In a deep pan take milk and on a medium heat keep it to boil.Keep stirring in between so that the milk does not stick to the bottom of the pan and also keep scrapping the sides of the pan.

Step 2: Dissolve the saffron strands with 1 tbsp warm milk.leave it for about 15 minutes.When milk is reduced to half then add sugar,cardamom powder and saffron mixture dissolved in milk.Keep Stirring the milk.When Khowa is formed then stwich off the gas and let the khowa cool down.

Step 3: When the pan is hot then only scrap the side of the pan with the help of spoon,otherwise it will be very difficult after it cooles down.When dough is cooled down enough to handle it then take ghee on your palm and start kneading the khowa on clean surface or plate.

Step 4: We take ghee on hand so that khowa odes not stick on hands and it is easier to knead it.While kneading if it is required take some more ghee on your hand.Knead for about 5-10 minutes until the khowa is smooth in texture.Then taking small portion of khowa at a time give it a shape of peda.Like this make rest of the peda.It is better if you keep them on butter paper after making or greased plate will also do.Garnish it with pistachio flakes.Let it set for around 2 hours.Then keep it in a air tight container.Rich,moist and delicious peda is ready.Enjoy !!
