Kaju Katli

Servings: Around 10 pieces

Cooking Time: 1 hr


  • 1/2 cup cashew (kaju)
  • 1/2 cup sugar
  • Ghee as required
  • Silver Vark


Step 1: Rinse the cashew properly and soak them in water for about 1 hour.Then take them in a blender and blend it to really smooth paste.

Step 2: Preheat a heavy bottom kadhai,then add cashew paste and sugar to it.Keep the flame on low.Keep stirring the mixture.Eventually it will be like a runny sauce.Then slowly it will solidify.

Step 3: After some time you will see that it has started to form as a dough.Keep stirring the mixture continuously.Do not leave it in between.When all the mixture is in the form dough and it is not sticking on the sides of the kadhai then take it out on a plate and let it cool down.

Step 4: When cashew dough is cool enough to handle then take it on a clean surface and smear some ghee on your palm and knead it little bit for around 1 minute.Then on a rectangular tray or on the back side of a steel plate,grease with ghee nicely.Grease rolling pin also with ghee so that the dough do not stick.Then roll it to the thickness of katli of your liking.After you have rolled the dough completely then garnish it with silver vark completely.Let it set for around half an hour then with a really sharp knife cut it into diamond shape.You can store it in air tight container.It remains fresh for about a week.Super tasty and easy kaju katli is ready.Enjoy !!
