Cooking Time: 1 hr
- 4 cups milk
- 8-10 fresh strawberries
- 1.5 cup sugar
- 1 tsp cardamom powder
- 2-3 strawberries for adding in kulfi.
- Finely chopped pistachio for garnishing (optional)
Step 1: First start with making strawberry puree.Remove the leaves of strawberry and chop them in bid chunks.In a bowl combine strawberries and 1/2 cup sugar and leave it for at least 30 minutes.Then pour it in a blender and blend it to a smooth puree. Sieve it with a strainer to get smooth strawberry puree.
Step 2: In the mean time you can start with boiling milk for the kulfi base.In a deep pan put the milk to boil in the medium heat.Keep stirring the milk in between so that it does not stick to the bottom of the pan.
Step 3: When the milk has reduced to half then add remaining 1 cup sugar and cardamom powder,stir it well.Let it simmer for about 10 minutes.Now switch off the gas and let the milk cool down completely.
Step 4: When milk mixture is cooled down completely then add strawberry puree in it and mix nicely.
Step 5: Chop 2-3 strawberries in small chunks and add it to the kulfi mixture. Pour the kulfi mixture in the container of your choice and then freeze it for atleast 5-6 hours or until the kulfi is set.
Step 6: When kulfi is set then garnish with finely chopped pistachio and serve.Enjoy !!
If you want more pink colour in the kulfi then you can add 1-2 drops of red colour in the kulfi mixture for more pink colour.
