Tomato Soup

Servings: 2-3

Cooking Time: 45 minutes

Ingredients:

  • 4 big tomatoes( if tomatoes are of medium size then take 5)
  • 1 onion
  • 4 green chillies (you can adjust it according to taste)
  • 1 clove of garlic
  • salt according to taste
  • 1 tbsp sugar
  • 1 tsp pepper powder
  • 1 tbsp oil
  • 1.5 cup water
  • 1 tbsp cream for garnishing
  • 1 tbsp coriander leaves for garnishing

Procedure:

Step 1: Chop tomatoes,onion,green chillies and garlic into rough big chunks.Heat oil in kadhai and when oil is hot enough then add garlic and chillies. Saute it for about half a minute and then add onion and tomatoes.Stir it nicely.

Step 2: Add salt and stir it.Now add 1 cup of water and cover the kadhai with a lid and cook for about 15 minutes.You have to cook until tomatoes are soft.Keep stirring in between.

Step 3: Once the tomatoes are soft then switch off the gas. Cool for sometime, at least 5 minutes, then strain the water and keep it aside.We will use this water again while boiling tomato soup, put all the pulp in a blender and then blend it to a smooth paste.

Step 4: Strain the paste nicely. Now in the same kadhai combine the water from step 3 which we had kept aside and the pulp paste which we have blended. Add sugar and pepper powder.Bring it to boil.If the soup is thick you can add 1/2 cup water.You can adjust the consistency of soup according to your liking.Boil for around 10 minutes.

Step 5: Pour the soup in a bowl and garnish with cream.You can simply put a dollop of cream in the center or you can make swirls out of cream.Garnish with coriander leaves and enjoy with bread croutons.Enjoy !!
