Veg Pulao

Servings: 2-3

Cooking Time: 45 minutes


  • 3 cup rice (Basmati rice is preferred)
  • 4 tbsp clarified butter(Ghee)
  • 1 tsp jeera seeds
  • 2 cardamom (elaichi)
  • 2 cloves (laung)
  • 1 inch cinnamon stick
  • 1 bay leave
  • 1/2 cup finely chopped beans
  • 1/2 cup finely chopped carrot
  • 1/2 cup green pea
  • 2 tbsp finely chopped cauliflower
  • salt according to taste
  • 1 tsp pepper powder
  • 1 tbsp cashew nuts chopped into half
  • 1 tbsp raisins
  • Water for boiling rice


Step 1:Boil the rice as we do for white steamed rice and keep it aside.

Step 2: Heat ghee in a kadhai and when ghee is hot add cardamom,cloves,cinnamon and bay leaves.Saute for about 1 minute.Now add jeera seeds and when jeera seeds starts crackling then add cashew nuts and raisins and saute for around half a minute.

Step 3: Now add finely chopped beans,carrot,cauliflower and peas.Stir nicely.Add salt and pepper.Cook the vegetables till they are soft and tender.

Step 4: When the vegetable mixture is cooled enough then add the boil rice which we prepared in step 1.Mix gently so that the rice grains do not break.Super tasty veg pulao is ready.Enjoy !!

Handy Tip:

You can use any refined oil in place of clarified butter(Ghee), but the rice taste best when made in ghee.
