Cooking Time: 20 minutes
- 1 cup raw mango chopped into cubes
- 1/2 tsp fennel seeds (saunf)
- 1/4 tsp nigella seeds (kalonji / black jeera)
- 1/4 tsp jeera seeds
- salt according to taste
- 1/2 tsp turmeric powder (Haldi)
- 1/2 tsp red chilli powder
- 1/4 cup sugar
- 1/2 tsp coriander powder
- 1 tbsp refined oil
- 1/4 cup water
Step 1: Heat oil in a kadhai and when oil is hot enough add fennel,nigella and jeera seeds.When the seeds starts crackling then add chopped mangoes.
Step 2: Add salt and turmeric powder, mix now add water and cover the kadhai with a lid and let it cook for around 5-7 minutes.You can keep stirring in between so that mango does not burn.
Step 3: When mangoes are soft then add chilli powder,coriander powder and stir nicely.
Step 4: Now add sugar and mix nicely.Let all the sugar dissolve and form syrup type of texture.Tangy and sweet mango launji is ready.Enjoy!!
You can store it in a jar and refrigerate it.It is good to use for around a week
