Roasted Tomatillo Salsa

Servings: a small bowl

Cooking Time: 20 minutes

Ingredients:

  • 2 medium sized tomatillo
  • 1 big garlic clove
  • Small piece of onion (quarter of medium sized onion)
  • 1 jalapeno/1 green chilli (you can adjust it according to taste)
  • 1/4 cup cilantro/coriander
  • 1 tsp olive oil (optional)
  • 1 tbsp lime juice
  • Salt to taste
  • 1 tsp sugar

Procedure:

Step 1: Position a rack near the top of the oven as we are going to roast the veggies before grinding it.Preheat the oven for 5 minutes  at 200 degree Celsius or 400 degree fahrenheit before roasting the veggies.

Step 2: Add the tomatillos,onion,jalapeno and garlic on a baking sheet and toss them in olive oil.Bake for 5-7 minutes at 200 degree Celsius or 400 degree fahrenheit. We have to broil it until nice char develops on the veggies.Keep stirring the veggies after 2-3 minutes so that they do not burn.It will take not more than 5-6 minutes for the veggies to roast so keep a close eye on the veggies.When the veggies have been roasted nicely, remove them from oven and let it cool for 5 minutes before handling.

Step 3: Peel the garlic and remove seeds from jalapeno if you want mild salsa otherwise for spicier version keep the seeds of jalapeno.Now in a blender jar combine roasted veggies,cilantro,lime juice,salt and sugar and blend to desired consistency.Pour the salsa into a serving bowl and serve with nachos or chips or use it in anyway you like.Salsa will taste better if chilled for at least an hour in refrigerator.You can also store the salsa in air tight jars in refrigerator.It is good for about a week.Enjoy !!
