Ingredients:
For Rice-
- 1.5 cups basmati rice
- 2 cardamom
- 2 cloves
- 1 inch stick of cinnamon
- 2 tbsp oil
- 1/2 tsp orange food color
For Vegetable Gravy-
- 2 cup potato (peeled and chopped into medium sized cubes)
- 1 cup cauliflower (chopped into medium sized florets)
- 1 cup carrot (peeled and chopped into medium sized cubes)
- 1/2 cup beans (chopped)
- 1 cup onion (thinly sliced)
- 4-5 green chillies (cut into two halves) (you can adjust it according to taste)
- 2 tbsp mint (roughly chopped)
- 2 tbsp coriander (roughly chopped)
- 4 tbsp refined oil/ghee
- 2 tbsp ginger garlic paste
- 3 cardamom
- 3 cloves
- 1 inch stick cinnamon
- 2-3 Bay leaf
- 1 tsp cumin seeds(jeera)
- Salt to taste
- 2 tsp turmeric powder (haldi)
- 2 tsp red chilli powder (you can adjust it according to taste)
- 2 tbsp garam masala powder (if you want more spicy then you can add more)
- 1 cup thick yogurt/curd
Other (for assembling the biryani)
- 1 big onion/1 cup onion(thinly sliced and fried)
- 2 tbsp coriander finely chopped
- few saffron strands dissolved in 4-5 tbsp of milk
- garam masala powder for sprinkling
- 1 tbsp ghee
Procedure:
Step 1: First of all wash the rice properly and soak for about 15 minutes.In this we have to cook rice in two different vessels because we have to give color to small portion of rice so that it looks very tempting.This is completely optional,if you do not want to use food color then make plain white rice as i will elaborate below.
Step 2: Take two thick bottomed deep pan.Add sufficient water so that rice can cook.We are cooking 1.5 cups of rice so we will make 1 cup white rice and 1/2 cup orange colored rice.According to rice,you can take water for cooking.We will flavor up the white rice with spices.When water starts boiling then add cardamom,cloves and cinnamon and add 1 cup rice to it.Also add 1 tbsp oil.We add oil so that rice do not stick to each other and have good texture. Add 1/2 tsp orange food color to the other vessel,add rice and 1 tbsp oil.
Step 3: We have to cook rice till it is 90% done.Rest 10% will be cooked when we will put biryani on dum. Be a little careful while cooking rice,do not over cook the rice.Drain the rice and keep it aside.Do not mix both the rices,we will mix it while assembling the biryani. So keep both the rice separately.
Step 4: Now thinly slice onion and deep fry it.When it is brown in color take it out on absorbent paper and keep it aside.We will need this while assembling the biryani.
Step 5: Now we will prepare vegetable gravy for the biryani. Take oil/ghee in a deep kadhai/pan.When oil in hot enough then add cardamom,cloves,cinnamon,bay leaf and cumin seeds.When the spices starts to splutter then add ginger garlic paste and saute it for around a minute or two.Keep gas on medium heat.
Step 6: When raw aroma of ginger garlic paste have gone then add onion and green chillies, give it a good stir.Then add potato,cauliflower,carrot ,beans,mint leaves and coriander and mix nicely.
Step 7: Now we will add salt,turmeric powder,red chilli powder and garam masala powder. Stir nicely so that all the spices gets mixed with the vegetables.Add yogurt and mix.Now cover the kadhai/pan and cook till all the vegetables are soft and tender.Stir occasionally so that it do not stick to the bottom of pan.The vegetables should not be mushy after cooking.You can add little water if required while cooking.The gravy should have medium or slightly thick consistency,it should not be watery. If the gravy is watery then simmer the gravy for sometime without the lid.
Step 8: Assembling the biryani – Take a thick bottomed pan and grease it completely with ghee.You can also use oven proof glass pan if you will dum the biryani in oven.I will tell two different ways of giving dum to biryani one in gas and other in oven.The assembling procedure is same for both the ways.
Step 9: Grease the pan nicely with ghee,then layer 1/4 of white rice at the bottom of the pan and then layer some of the orange colored rice,mix it a little bit.It will be like given in the picture below:
Then layer with half of the vegetable gravy.
Then again layer with half of white rice and half of orange rice.Then layer with finely chopped coriander leaves and sprinkle some garam masala on top of it.Then again layer with rest of the vegetable gravy and then layer with remaining rice.Now for the top layer,add saffron soaked in milk.Spoon it evenly all over the rice and finally layer with fried onion.Sprinkle some garam masala. Now biryani is completely assembled.
Step 10: Cover the pan with aluminium foil and then cover with lid. Now we can give dum to biryani in two ways.On tava or in oven.First I will tell how to do it in tava. Take tava/ griddle and heat it on medium flame.When tava is hot enough,then lower the flame and keep the sealed biryani handi/pan on tava. Keep the gas on low heat and cook for about 25-30 minutes.Second way is to do it in oven. Pre heat the oven on 180 degree celsius/350 degree fahrenheit for about 10 minutes then keep the sealed pan in the oven and cook for about 30 minutes.Delicious authentic hyderabadi vegetable biryani is ready.Serve with any raita of your choice,onion salad,pickle and be a party star.Enjoy !!
