Ingredients:
- 3 cups grated carrot
- 5 tbsp ghee (clarified butter)
- 2 cups whole milk
- 1/2 cup sugar (you can adjust it according to taste)
- 1 tbsp finely chopped cashew.
- Cashew/Almonds/Pistachio flakes for garnishing
Procedure:
Step 1:Take ghee in a kadhai and when ghee is hot enough then add the grated carrots in it.Stir it nicely.Keep the gas on medium flame.
Step 2: Keep stirring and cooking carrots till all the moisture of carrots is evaporated.It will take around 15-20 minutes.It will look like in the picture given below:
Step 3: After this add milk to the carrots and mix nicely.Keep the gas in medium flame.After adding milk you have to keep stirring the halwa in short intervals so that it does not stick to the bottom of the pan/kadhai.
Step 4: Cook the halwa till the milk has completely thickened and absorbed in the carrots.Add chopped cashew and stir it nicely.Cook it more for about 5-10 minutes.
Step 5: When carrots are cooked properly then add sugar and stir nicely.Cook for about 10 minutes till the sugar dissolves completely and then turn off the flame.Take it out on a serving dish and garnish with cashew/almonds/pistachio flakes and serve.Enjoy !!
Handy Tip:
You can store this halwa in air tight container and refrigerate it. It remains good for about a week.Just before eating warm it up in microwave for about 30 seconds and serve.
