Servings: 12 normal sized muffins (if you will make small sized muffins then around 20)
Cooking Time: 45 minutes
Ingredients:
- 1 1/2 cups all purpose flour (maida)
- 3/4 cup sugar
- 1/2 cup oil/butter
- 1 tsp vanilla essence/vanilla extract
- 1/2 tsp baking soda
- 1 1/4 tsp baking powder
- 1 cup thick curd/yogurt
- 1/2 cup chocolate chips
Procedure:
Step 1: Preheat oven to 180 degrees celsius/350 degrees fahrenheit. Line a muffin tray with cup cake cases or else if you don’t have muffin tray then you can use aluminium foiled muffin cases which you can place over your baking tray and bake easily.(As shown in picture below step 5)
Step 2: Take curd,sugar and oil in a deep bowl and whisk it nicely.
Step 3: Now add vanilla essence,baking soda and baking powder to the mixture,whisk nicely.The batter will become frothy and light.
Step 4: Add in flour and fold gently.Do not over mix the batter.When flour is folded completely then add chocolate chips and mix nicely.
Step 5: Now fill in the muffin cases about 3/4th with help of ice cream scoop or with spoon.If you fill less then it will not rise much.Bake it for about 20-25 minutes on 180 degrees celsius /350 degrees fahrenheit.
Step 6: After 25 minutes check with a toothpick or knife and if it comes out clean then it means cup cakes are ready.Serve Warm or store it in a air tight container and keep enjoying. These cup cakes are super moist and very yummy.
