Palak Paneer

Servings: 2-3

Cooking Time: 1 Hr

Ingredients:

  • 6 cups washed and chopped spinach (palak)
  • 1 tbsp ginger roughly chopped
  • 1 tbsp garlic roughly chopped
  • 4 tbsp refined oil
  • 1 tsp cumin seeds (Jeera)
  • 2 whole cardamom
  • 2 cloves (laung)
  • 1 inch cinnamon stick (dalchini)
  • 2 bay leaves
  • 1/2 tsp kasturi methi (MDH,Everest any)
  • 1 cup onion finely chopped
  • 1 cup tomatoes finely chopped
  • salt to taste
  • 2 tsp red chili powder (you can adjust it according to taste)
  • 1 tsp garam masala
  • 1/2 tsp turmeric powder
  • 1/2 cup fresh cream(Malai)
  • 1 cup milk
  • 2 cups paneer cubes

Procedure:

Step 1: First of all properly wash the spinach leaves and then chop them roughly.Then Boil water in a kadhai and when water starts boiling then add spinach leaves to it.Spinach leaves boils very quickly,it takes around 4-5 minutes.

Step 2: Strain the spinach leaves with the help of strainer and then wash them with cold water,this helps to maintain the beautiful green color of spinach leaves.Take the boiled spinach leaves in a blender jar and blend it to a smooth paste.You can add little water if required during blending the spinach leaves.

Step 3: We will now proceed further by making ginger garlic paste,take ginger and garlic in another blender jar and blend it to smooth paste,use little water if required.

Step 4: Take oil in a kadhai and when oil is hot enough then add cumin seeds, cardamom,cloves, cinnamon and bay leaves.Saute it for about a minute or till jeera seeds starts crackling.Add ginger garlic paste to the oil and saute it nicely for a minute or two.

Step 5: Add finely chopped onion and saute it till it is translucent in color.Now add spinach puree and stir nicely.Add salt,turmeric powder,red chili powder and garam masala and mix nicely.Saute this mixture for about 5-7 minutes then add finely chopped tomatoes.

Step 6: Keep stirring the mixture so that it does not stick to the bottom of the pan.When the mixture starts leaving oil from the sides of the kadhai then it means it is cooked properly.Now add fresh cream and kasturi methi  and mix nicely.

Step 7: Add paneer cubes to the gravy and mix nicely.Now add milk to the gravy.You can adjust the quantity of milk added according to your preference.Simmer the curry for about 5 mintes.Super delicious palak paneer is ready.Serve with any bread of your choice.Enjoy !!
