Kheer

Servings: 2-3

Cooking Time: 45 minutes

Ingredients:

  • 3 cups whole milk
  • 1/4 cup rice
  • 1/2 cup sugar (you can adjust it according to your taste)
  • 1 tsp cardamom powder
  • few tsp saffron strands
  • 2 tbsp almond flakes
  • 1 tbsp pistachio flakes

Procedure:

Step 1:  First of all rinse the rice properly.Do not soak it,just rinse it and drain all the water properly and keep it aside. Take milk in a heavy bottomed pan or kadhai,we take heavy bottom so that milk do not stick to the bottom of the pan or kadhai.

Step 2: When milk comes to boil then add the rice and give it a good stir.Now keep boiling  the milk on medium flame till it reduces to half of its quantity.Keep stirring in between so that it does not stick to the bottom of the pan and also keep scraping the sides of the pan.

Step 3: Soak few strands of saffron in warm milk till it leaves its color and we add it to the milk at last because if we add saffron at the earlier stage then rice will not cook properly and it will remain raw.

Step 4: When milk is reduced to half and rice is also cooked properly then add cardamom powder,sugar and saffron dissolved in milk to the milk mixture.Keep stirring the milk.

Step 5: Simmer it till sugar dissolves properly.Now you can keep kheer’s consistency according to your preference,if you want thick kheer then boil it further more to get dense consistency or if you want kheer at this stage then simmer the kheer on medium flame for about 10 minutes.Add almonds and pistachio and simmer for 2 minutes.Preserve some nuts for garnishing.

Step 6: Take out kheer in a bowl and garnish with almonds flakes,pistachio flakes and saffron and serve warm.If you like cold kheer then refrigerate it for about an hour then enjoy this delicious kheer. Enjoy !!

Handy Tip:

You can add nuts according to your choice and availability. You can add cashew,almonds,pistachio or raisins whatever you feel like.

You can also make this recipe without saffron.It taste equally good.
