Cooking time: 45 minutes
- 3 cup rice
- 4 tbsp refined oil (vegetable,sunflower etc)
- 1 tbsp jeera
- 2 cloves of garlic
- 4-5 green chillies
- 1 big onion (if onion is small then take two)
- 10 beans
- 1 carrot
- 1/2 bunch / 2 cup finely chopped spinach
- 1/2 cup spring onion (optional)
- salt according to taste
- 1 tsp turmeric powder (Haldi)
- 1 tsp red chilli powder (adjust according to taste)
- 1/2 tsp pepper powder
- 1 tsp garam masala
- Finely chopped coriander leaves for garnishing
- Water for boiling rice.
Step 1: Boil the rice as we do for white steamed rice and keep it aside.
Step 2: Chop all the vegetables in small cubes/finely.Wash the spinach properly before chopping as spinach contains fine sand particles.
Step 3: Heat oil in a kadhai, when oil is hot enough then add jeera .When jeera begins to crackle then add finely chopped garlic and chilies.
Step 4: When garlic and chilies turn little brown in color then add finely chopped onion and saute it till onion turns translucent in color.
Step 5: When Onion turns translucent then add beans, carrot, spring onion and spinach and stir it with spoon nicely so that the vegetables do not stick to the bottom of the kadhai. Keep the gas in medium heat.
Step 6: After sauteing vegetables for around 2 minutes then add all the spices(salt, haldi,red chilly powder,pepper powder and garam masala).Stir the vegetables nicely after adding spices.Now cover the kadhai with the lid for around 5 minutes.When we cover the lid,the cooking process will be fast and the vegetables will cook quickly.Keep the gas in medium heat.
Step 7: When the vegetables have cooked properly then add rice and mix it nicely but little carefully so that the rice do not break.Garnish the rice with coriander leaves. Steaming hot Spinach rice is ready to be served.Serve it with curd or any raita of your choice.Enjoy !!
