Ingredients:
- 3 cup rice
- 1/2 cup moong daal
- 4 tbsp refined oil (vegetable,sunflower etc)
- 1 tbsp jeera
- 2 cloves of garlic
- 4-5 green chillies
- 1 big onion (if onion is small then take two)
- 10 beans
- 1 carrot
- 1/2 cup green peas
- 1 cup finely chopped mint leaves
- 1/2 cup spring onion (optional)
- salt according to taste
- 1 tsp turmeric powder (Haldi)
- 1 tsp red chilli powder (adjust according to taste)
- 1/2 tsp pepper powder
- 1 tsp garam masala
- Finely chopped coriander leaves for garnishing
- Water for boiling rice.
Procedure:
Step 1: Boil the rice as we do for white steamed rice and keep it aside.Soak moong daal at least 2 -3 hours before cooking this rice, then rinse it nicely 2-3 times and keep it aside.
Step 2: Finely chop all the vegetables in small cubes.Wash the mint leaves properly before chopping as it may contain fine sand particles.
Step 3: Heat oil in a kadhai, when oil is hot enough then add jeera .When jeera begins to crackle then add finely chopped garlic and chilies.
Step 4: When garlic and chilies turn little brown in color then add finely chopped onion and saute it for 2-3 minutes till onion turns translucent in color.
Step 5: When onion turns translucent then add beans, carrot, spring onion, peas, mint leaves and moong daal and stir it with spoon nicely so that the vegetables do not stick to the bottom of the kadhai.
Step 6: After sauteing vegetables for around 2 minutes then add all the spices(salt, haldi,red chilly powder,pepper powder and garam masala).Stir the vegetables nicely after adding spices.Now cover the kadhai with the lid for around 5 minutes.When we cover the lid,the cooking process will be fast and the vegetables will cook quickly.Check vegetables after 5 minutes,if the vegetables are not cooked then cover the lid and cook for another 5 minutes.Keep heat in medium flame.
Step 7: When the vegetables have cooked properly then add rice and mix it nicely but little carefully so that the rice does not break.Garnish the rice with coriander leaves. Steaming hot moong daal mint rice is ready to be served.Serve it with curd or any raita of your choice.Enjoy !!
