Onion Potato Poha

Servings: 2-3

Cooking Time: 20 minutes

Ingredients:

  • 2 cup thick flattened rice (poha)
  • 1 cup potato chopped into small cubes
  • 1 cup onion chopped into small cubes
  • 2-3 green chilies finely chopped (you can adjust it according to taste)
  • 1/2 cup green peas (fresh or frozen which ever you can use)(optional)
  • 2 tbsp finely chopped coriander
  • 4 tbsp refined oil (vegetable,sunflower,peanut or rice bran any you can use)
  • 1 tsp mustard seeds
  • Salt to taste
  • 1 tsp turmeric powder
  • 1 tsp red chilli powder (you can adjust it according to taste)
  • 1 tsp black pepper powder

Procedure:

Step 1: First of all we will wash the flattened rice.Take Flattened rice in a deep bowl, add water to it and by mixing with hands rinse it twice by changing water.Then immediately drain it nicely with help of colander and keep it aside.Keep it in the colander only with a bowl beneath it so that if any water is there will drain slowly.Do not leave the flattened rice in water otherwise it will become soggy and mushy.Use thick flattened rice only because when you will wash them it will not become soggy immediately.If you will use thin ones then as you will pour water to wash them it will become soggy and mushy immediately.

Step 2: Take a deep kadhai/pan and add oil to it and when oil is hot enough then add mustard seeds to it.When seeds starts crackling then add green chilies and onion to it.Saute it for about a minute or so.Then add potatoes and green peas to it and mix nicely.

Step 3: Add salt,turmeric powder,red chili powder and pepper powder to it and stir the veggie mixture nicely.Cover and cook the veggies till potatoes are cooked and soft.Keep the gas on medium heat.Keep stirring the veggies in between so that it does not stick to the bottom of the pan.It will take around 10 minutes.When you will chop potatoes then chop it in small cubes,it will cook fast.

Step 4: When the veggies have cooked properly then add washed flattened rice to it and stir gently so that all the veggies are mixed nicely with the flattened rice.Now add chopped coriander to the poha and serve hot with ketchup or coriander chutney.This is a super easy and quick breakfast or snacks dish.It is also a great lunch box item for kids.You can also add another veggies to it like carrots,beans,capsicum as per your  or kids liking.Do try this super easy recipe and let me know.Enjoy !!
