Servings: 1 pound cake,serves 4-5
Cooking Time: 1 hour
- 1 cup curd/yogurt
- 1 1/2 cup all purpose flour/maida
- 1 1/8 tsp baking powder
- 1/4 tsp baking soda
- 3/4 cup sugar
- 1 pinch salt
- 1 tsp cinnamon powder
- 1 tsp vanilla extract
- 1/2 cup oil
For Apple topping-
- 1 apple peeled and chopped into small cubes (granny smith apple is preferred as it is tart)
- 1 tbsp butter
- 1/4 cup brown sugar
- 1 tsp vanilla extract
- 1 tsp cinnamon
- pinch of salt
Step 1: First of all we will make apple topping.Combine all the ingredients in a non stick pan and put on medium heat.Slowly sugar will start melting and will start covering the apples.When sugar has melted completely and has become little thick and have covered the apples nicely and apples have also become little soft then it means the topping is ready.Switch off the heat,keep it aside and let it cool.
Step 2: In the mean while take a deep bowl and combine curd,oil,sugar and vanilla extract and mix nicely.Mix until sugar is dissolved properly in the curd and the mixture is smooth in texture.
Step 3: Sieve all purpose flour,baking powder,baking soda ,cinnamon powder and salt together.Now add the dry ingredients in the wet mixture in batches and mix nicely.The batter will be little thick and dense.If it is too thick and dense then add 2-3 tbsp milk in it.Mix the dry ingredients with the wet mixture nicely.
Step 4: Pre heat oven for about 15 minutes at 180 degree celsius or 350 degree fahrenheit. Prepare a baking dish /tin by greasing and dusting with flour nicely. Pour the batter in the tin,make it even with spatula/spoon and tap it well.We tap the tin after pouring the batter so that if there is any air bubbles in the batter,it will escape.Now top the cake with the apple topping which we have prepared in step 1.Spread it evenly all over the cake with spatula/spoon.
Step 5: Now bake the cake for about 30-35 minutes. After 30 minutes check the cake by inserting a clean knife or tooth pick at multiple places and if it comes out clean this means cake has been baked properly.Take out the cake from the oven safely and let it cool for about 10 mins in the pan and then unmould it on the wire rack and let it cool completely. Then you can cut it and serve with hot tea or coffee or you can top it will vanilla ice cream and serve as a desert.This cake is good for 4-5 days.Enjoy !!
You can also mix the apple topping prepared in step 1 in the cake batter and bake.But add only the apples,do not add any sugar syrup in the batter as this can make cake soggy and crumbly.
