Nutty Dates Roll

I am sharing recipe of Nutty Dates Roll with you all today. As festive season has already started and Diwali is round the corner, I am sure you all must be busy preparing sweets and snacks for your loved ones. So here I have for you a very easy recipe which is not only super quick but also very healthy as it does not have any added sugar and is completely diabetic friendly. You can make this ahead of time and share it with your friends and family. I am also posting this recipe as part of our A to Z Challenge and this months we have to choose the ingredient with alphabet D and immediately what came in my mind was Dates.

This is my 3rd dish in the A to Z challenge series, the first two were  Broccoli and Tofu Stir Fry  and Cauliflower Tawa Kebab. I hope you all will like it.

Servings: 9-10 pieces

Cooking Time: 30 minutes

Ingredients:

  • 1 cup dates
  • 8-10 cashew
  • 2 tbsp almonds
  • 1 tbsp pistachio
  • 1 tbsp melon seeds (Magaj)
  • 2 tbsp ghee (clarified butter)

Procedure:

Get all the ingredients ready. I have used pitted dates, if you are using dates with seeds then remove the seeds before proceeding. You can adjust the nuts according to your liking. Finely chop the nuts and keep it ready.

First of all we have to grind the dates. Take dates in a grinder jar and grind it to a coarse paste. Do not add water.

Take 1 tbsp ghee in a pan and when ghee is hot enough add finely chopped nuts in it. Saute it on low to medium heat for 5-7 minutes. Keep stirring it continuously. When nuts starts turning slight golden brown in color, take them out in a plate and keep it aside.

In the same pan take 1 tbsp ghee and when ghee is hot enough add grinded dates in it. Keep the gas on medium heat.

Stir the dates nicely and mix it with the ghee. In few minutes it will turn pulpy. Roast the dates for around 5-7 minutes and then add roasted nuts in it.

Mix the nuts and dates nicely. Switch off the gas and let it cool.

When the dates mixture is little warm enough to handle, take it out on a plate. Knead it with your hands for around 2-3 minutes and shape it like a log as shown in the second picture above.

Now take the dates mixture on a aluminium sheet or cling wrap. Tightly roll the aluminium sheet and close it from both the ends. It will look like the second picture given above. Now keep this in refrigerator for 30-45 minutes.

After 45 minutes take it out of refrigerator and keep it outside for 5-10 minutes. Then unwrap it and take it on a cutting board. Cut it into slices 1 inch apart as shown in the second picture above.

Super delicious Nutty Dates Roll is ready to be enjoyed. Keep it in an air tight container in room temperature. It is good for about a week. Do not need to refrigerate it.
