Atta ka Laddu

Hello Friends,

Today I am going to post recipe for Atta Ka Laddu or also know as Gondh ka Laddu. This is my grand mothers recipe and very dear to my heart. This laddu is made in winters every year in my home. This is really good for health, I know I know it does have lots of calories but clarified butter and gondh (edible gum ) is really good for health and provides lots of strength. This recipe is very easy and totally delicious, I am sure you will not be able to stop yourself in one laddu. Here is the recipe.

Servings: 22-23 medium sized laddu

Cooking Time: 45 minutes

Ingredients:

  • 2 cups whole wheat flour
  • 1/2 cup semolina (sooji, rawa)
  • 1.5 cups clarified butter (ghee)
  • 1/2 cup edible gum (gondh) ( you can adjust it according to your liking)
  • 1/4 cup almonds finely copped
  • 1 cup powdered sugar

Procedure:

Get all the ingredients ready.

Take a heavy bottomed kadhai and add ghee to it.

When ghee is hot enough add whole wheat flour and semolina in it. Take a flat spatula and mix flour and ghee nicely. Keep the gas on medium flame.

We will roast the flour on medium flame and we have to keep stirring it continuously so it roast evenly and do not stick to the bottom of the kadhai. It will take around 20-25 minutes to roast the flour nicely. Do not roast on high flame otherwise the flour can burn and also taste will not be so good. When the flour is roasted nicely it will look like the second picture given above. You will also get nice aroma of ghee and roasted flour when it is done.

When the flour is roasted nicely, add edible gum and chopped almonds in it and keep stirring it. Keep the gas on medium flame only. In 2-3 minutes the edible gums will swell up and almonds will also be roasted. Approximately after 5-7 minutes switch off the gas,  but keep stirring the flour as the kadhai is still very hot and flour can stick to the bottom of the kadhai. After around 5 minutes the flour and ghee mixture will cool down a little bit. Then you can leave the mixture to cool down completely. You can give it a stir after every 10 minutes. To proceed further the mixture should completely cool down.

When the ghee and flour mixture has cooled down completely add powdered sugar in it and mix it nicely.

Mix the sugar with your hands and while mixing crush all the swelled up edible gums. There should not be big pieces of edible gum in the laddu. After swelling it can be easily crushed by hands. After mixing sugar the laddu mixture will look like the picture given above.

Now take a small portion of laddu mixture in your hand and press it with your fist and then take it between your palms and roll it form a laddu. You can make laddu of any size of your choice.

Like this make rest of the laddu and keep it on a plate. Do not ever keep laddu on a kitchen towel or napkin or news paper as it will absorb all the ghee and laddu will become dry and will not taste good.

Super yummy Laddu are ready to be enjoyed in this chilli winters. Keep it in a air tight container and it is god for about a month. If it has become very hard due to cold then just warm it up a little bit in microwave and enjoy. These laddu are really very good for heath. One laddu  with a glass of milk is enough for your power pack breakfast. If edible gum is not available or if you do not like the taste of edible gum then you can also make this laddu without it.
