Eggless Christmas Fruit Cake

Hello Friends,

Wish you all a very Happy Merry Christmas. Its so much festive and joy all around during this season. Christmas is all about delicious deserts and  traditional dishes which is prepared in every household but celebrations are incomplete without a traditional fruit cake so here I have a very easy recipe of eggless christmas fruit cake for you all. This recipe is too easy and takes no time at all.

Servings: 1 pound cake, 4-5

Cooking Time: 1 hr

Ingredients:

Dry Ingredients-

  • 1 1/2 cups all purpose flour/maida
  • 1 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon powder
  • 1/4 tsp nutmeg powder
  • 1/4 tsp cloves powder

Wet Ingredients-

  • 1 cup yogurt (plain curd/dahi)
  • 3/4 cup dark brown sugar
  • 2 tbsp honey
  • 1/4 cup oil (any neutral flavor oil like vegetable oil, peanut oil, sunflower oil etc can be used)
  • 1 tsp vanilla extract (vanilla essence)
  • 1/4 cup milk

For Soaking-

  • 1/4 cup candied papaya (tutti fruity)
  • 1/4 cup dried cranberries
  • 1/4 cup raisins
  • 1/4 cup almond (chopped)
  • 1/4 cup cashews (chopped)
  • 1/4 cup walnuts (chopped)
  • 1 cup rum/ apple juice

Others-

  • 1 tsp orange zest
  • 1 tbsp oil/butter for greasing the cake pan
  • 1 tbsp all purpose flour/maida for dusting the cake pan
  • 1 tbsp candied papaya (tutti fruity for decorating the cake)

Procedure:

Get all the dried fruits ready and add them in a deep bowl. Add rum or apple juice in it and soak it for at least 2 hours. I have used rum (bacardi white rum) in this cake.

Take a deep bowl and add all purpose flour in it. Sieve the flour for better results. Now add baking powder, baking soda, salt, cinnamon powder, nutmeg powder and cloves powder in it.

Mix all the ingredients nicely. Our dry ingredients are ready.

In another deep bowl take yogurt/curd and add brown sugar in it.

Mix it nicely till sugar and yogurt is mixed properly.

Now add honey, oil and vanilla extract in it and mix it very nicely. Our wet ingredients are also ready.

Now add the dry ingredients in the wet mixture in batches and mix nicely. Add milk while mixing the batter to get a smooth batter.

Drain the excess rum or apple juice and add only the soaked dried fruits. Do not add any of the soaking liquid other wise the batter will become runny and cake will not turn out good. Mix the dried fruits nicely with the batter. Also add orange zest at this stage and mix it nicely. Cake batter is ready,it should be smooth in texture,there should not be any lumps in the batter.

Pre heat oven for about 10 minutes at 180 degree celsius or 350 degree fahrenheit. Prepare a cake pan (you can use any pan of your choice,I have used 8″ by 8″ square cake pan) by greasing and dusting with flour nicely.Pour the batter in the cake pan and tap it well. We tap the tin after pouring the batter so that if there is any air bubbles in the batter,it will escape.

Now decorate the cake by some more candied papaya (tutti fruity). Now bake the cake for about 30-35 minutes. After 25 minutes check the cake by inserting a clean knife or tooth pick at multiple places and if it comes out clean this means cake has been baked properly.If not then bake it more for about 5 minutes and then check it again.

Take out the cake from the oven safely and let it cool for about 10 mins in the pan and then unmould it on the wire rack and let it cool completely.

Now you can cut it and serve with hot tea or coffee or as it is. This cake is super delicious and trust me friends it is irresistible. You just can’t have one. Store this cake in an air tight container and it is good for 4-5 days. Do try this friends and please let me know how you like it. Enjoy !!
