Stuffed Bell Pepper Rings

Hello Friends,

Today I am going to post recipe for Stuffed Bell Pepper Rings. In this recipe I have used three different color of bell peppers but it is completely optional, you can also make this with regular green bell pepper/capsicum or any bell pepper of single color. This is super easy recipe and you can modify it in any way you like. It is a fun way to make your kid eat veggies and paneer at the same time. You can also make regular paneer bhurji or simple potato sabji and stuff it in bell pepper. This is also an easy party appetizer which you can easily make ahead of time and just warm it up while serving.Do try this friends and let me know how you like it.

Serving: 3 rings

Cooking Time: 30 minutes

Ingredients:

  • 1 ring from red bell pepper
  • 1  ring from yellow bell pepper
  • 1 ring from orange bell pepper
  • 1/4 cup grated/crumbled paneer
  • 2 tbsp finely chopped Jalapenos/ green chilies (you can adjust it according to taste)
  • 1/2 cup finely chopped onion
  • 1/2 cup grated carrot
  • Salt to taste
  • 1 tsp black pepper powder (freshly crushed is preferred)
  • 1 tsp garlic powder
  • 2 tsp oregano
  • 1 tsp red chili flakes (you can adjust it according to taste)
  • Italian Seasoning according to taste
  • Cornflour as required
  • 2 tbsp grated parmesan cheese
  • 2 tbsp oil for roasting

Procedure:

Here I have shown six rings of bell pepper but I have used only three rings of each color for the recipe. Cut bell peppers into thick rings and remove the seeds carefully so that the rings do not break.

Take a bowl and add paneer, finely chopped jalapenos, onion and grated carrot in it.

Stir it nicely so that all the ingredients are mixed nicely.

Now add salt, black pepper, garlic powder, oregano, chili flakes and italian seasoning in the veggie mixture and mix it nicely. First add 2 tbsp cornflour and mix it nicely. The mixture should come to binding texture i.e. when you will take in your palms and press, it should hold the shape. Add more cornflour and little water if required to attain the required texture.

Finally add parmesan cheese and mix it nicely. Give stuffing a taste in this stage and adjust the seasoning and salt accordingly.

Take a ring in your hand and stuff it with the prepared mixture and press it nicely with both of your palms so that mixture holds in between the rings.Like this stuff rest of the rings.

Take a non stick pan, add 2 tbsp oil in it. Keep the gas on medium heat. When pan is hot enough place the rings carefully in it and roast the rings till nice char appears on both sides of the rings. It takes around 5-7 minutes. You can also roast them on a grill pan or griddle.

Stuffed Bell Pepper Rings are ready to be served. Serve them warm with tomato ketchup or any sauce of your choice. These are super simple and takes no time at all. You can also make them in red and green bell pepper only and arrange them in a big platter in a form of a wreath to go with your christmas theme in your holiday dinners or  christmas dinner.
