Fruit Sandesh

Hello Friends,

Today I am going to post recipe for Fruit Sandesh. Diwali is over but I think I am still not out of Diwali Sweets fever, actually just after three days of Diwali it was my husbands birthday and I want to whip up some sweets for him. He is not at all desert fan as me so I thought to make something which is little sweet with some  fruity twist and while I was scanning my refrigerator I came across milk, kiwi and a tin pineapple and ta da here I present sandesh with a fruity twist. I made Kiwi Sandesh and Pineapple Sandesh but you can also make Strawberry Sandesh or Mango Sandesh like wise. These turned out super delicious. Trust me and do try it once and I am sure you will love them as much as I do.

Servings: 4 Kiwi Sandesh and 2 Pineapple Sandesh

Cooking Time: 20 minutes

Ingredients:

For Sandesh-

  • 1/2 cup crumbled paneer (homemade paneer is preferred as it more moist and soft)
  • 2 tbsp condensed milk ( You can add 2-3 tbsp powdered sugar instead of condensed milk, add more sugar if you like more sweet)
  • 1/2 tsp cardamom powder
  • 1 tbsp finely chopped pistachio

For Kiwi Sandesh-

  • 8 kiwi slices

For Pineapple Sandesh-

  • 2 pineapple slices
  • Few pistachio for garnishing
  • Few edible rose petals for garnishing (optional)
  • Few strands of saffron for garnishing (optional)

Procedure:

Take crumbled paneer in a plate and then knead it with your hands as we do while making dough for the chapati. Knead it till all the paneer comes together and it forms smooth soft dough.It will take 4-5 minutes.

Now add condensed milk and cardamom powder in it.

Mix it nicely. Add finely chopped pistachio in it and mix it again very nicely. Sandesh is ready. For plain sandesh just roll little portion of the paneer mixture between your palms and form a small ball and then press it a little bit in center. Chill it for at least an hour and then serve.

We will use this paneer mixture for making Kiwi Sandesh and Pineapple Sandesh.

Kiwi Sandesh-

Peel and slice the kiwi. Keep the slices little thick so that it can hold the sandesh mixture nicely.

Now take one slice of kiwi, spread sandesh mixture on it nicely and then top it with another slice of kiwi.

Our Kiwi Sandesh is ready. Keep it in refrigerator for at least an hour and serve it chilled. Like this make rest of the Kiwi Sandesh.

Pineapple Sandesh-

Take a slice of pineapple on a plate and

top it with the sandesh mixture and then garnish it will chopped pistachio, rose petals and saffron according to your liking. Keep it in refrigerator for at least an hour and serve it chilled. Like this make rest of the Pineapple Sandesh.

Fruit Sandesh

Both of these sandesh are too delicious. The sweetness of sandesh and the little tartness of the fruit takes this desert to a whole new level. You can also make strawberry sandesh and mango sandesh like wise. This desert is perfect for your post Diwali parties after the overdose of traditional sweets as this is very lightly sweetened and tastes very refreshing. Do try this and let me know how you like it.
