Missi Roti (Whole Wheat flour and gram flour Bread)

Servings: 10 rotis

Cooking Time: 35 minutes

Ingredients:

  • 1 cup whole wheat flour
  • 1 cup gram flour (besan)
  • Salt to taste
  • 1 tsp turmeric powder
  • 1 tsp red chilli powder (you can adjust it according to taste)
  • 1/2 tsp carom seeds (ajwain)
  • 3 tbsp plain yogurt (curd/dahi)
  • 3-4 green chillies finely chopped (you can adjust it according to taste or you can skip it completely if you want less spicy)
  • 1/4 cup coriander finely chopped
  • 2 tbsp oil
  • Water as required for kneading the dough
  • 2-3 tbsp whole wheat flour for rolling the roti
  • ghee for smearing on the roti

Procedure:

Take whole wheat flour and gram flour in a deep bowl.

Add salt, turmeric powder, red chilli powder, carom seeds and mix it nicely with the flour.

Now add yogurt, finely chopped green chillies and coriander. Mix it nicely in the flour.

Add oil and mix it with flour.

Now knead the dough using little water as required.Knead a little stiff dough.First the dough will be little sticky but afterwards it will come together. After that cover the dough and keep it to rest for at least 15 minutes.

Then divide the dough into 10 equal sized balls.

Roll out each portion of the dough using little flour into a small circle.The roti should neither be very thin nor thick.

Like this roll out rest of the rotis.

Heat a tava and when tava is hot enough then place the roti gently over it.Cook it till small eruptions appear on the surface. Turn over the roti and cook for few more seconds.It will look like the second picture given above.

After it is cooked a little bit on tava, roast the  roti on an open flame. Roast on a low flame so that roti will cook evenly and will become crispy also. Roast it till brown spots appear on both the sides.It will look like the picture given above.

Smear ghee on top of the roti generously. It taste best with lots of ghee on it.Like this make rest of the rotis.

Super delicious missi rotis are ready to be enjoyed. Serve it hot with piping hot rajasthani plain kadhi, some garlic chutney and papad. This is out of the world combination. Trust me and try this at least once. You can also serve this roti with any curry of your choice. Do try this and let me know how you like it. Enjoy !!

    They have pre-made missi roti at the store down the street from us and I’ve been curious but yours look so much better. I need to practice making roti more. I try every now and again – they don’t come out quite right and so I get discouraged and give up. I think the answer is really to keep at it. Homemade is, after all, so much better than the prepared ones from the store.
