Ingredients:
- 1/2 cup sooji (Semolina/rawa)
- 1/4 cup ghee (clarified butter)
- 1 cup milk
- 1.5 cup water
- 1 cup pineapple puree
- 1/2 cup pineapple chopped into small cubes
- 1/2 cup sugar (You can add more if you want more sweet)
- 1/4 cup almond flakes
- 1 tsp cardamom powder
- 1 tbsp almond flakes for garnishing
Procedure:
Get all the ingredients ready for halwa.
In a pan add milk and water, put it on medium heat. Bring it to boil.
Meanwhile take a pan and add ghee in it.
When ghee is hot enough add semolina in it and stir it nicely.Keep the gas on low to medium heat.
Keep stirring the semolina so that it is roasted properly and evenly.
Roast the semolina till it starts giving nice aroma and it is roasted properly.It takes around 10-15 minutes.
Now add almond flakes in it and mix it nicely with semolina. Roast it again for about a minute or so.
After a minute when almonds are also roasted a little bit add pineapple puree in it.For pineapple puree blend 3-4 slices of pineapple in a blender jar and pineapple puree is ready.While blending you can use pineapple juice or water as per availability. Mix it nicely with the semolina.
Add chopped pineapple and mix it nicely. Now again roast it for about a 4-5 minutes on low to medium heat.
When it is roasted nicely add hot water milk mixture in it and stir it nicely.
When water and milk mixture is nicely incorporated in semolina add sugar and cardamom powder in it. Mix all the ingredients very nicely. You can adjust sugar as per taste. But at first add little sugar and then adjust it as pineapple is also sweet. If pineapple is soaked in sugar syrup then 1/2 cup sugar will be sufficient but if it soaked in pineapple juice then you can add 2-3 tbsp of sugar more according to taste. You can also add a pinch of yellow food color for more yellowish color. I was out of it so I skipped it.
When sugar is nicely mixed with semolina switch off the gas. Halwa becomes little more dense after cooling so as soon as sugar is mixed nicely switch off the gas otherwise it can become more dense.
Super Scrumptious pineapple halwa is ready to be served. Take it out in a bowl and garnish it with few almond flakes and serve it warm. Trust me it is super delicious and worth a try. My husband is not a sweet fan but he finished a big bowl of it as soon as I made it. It is perfect for parties and you can make it ahead of time and warm it up a little bit in microwave while serving. Do try it and let me know how you like it. Enjoy !!
