Ingredients:
- 1 cup red kidney beans ( you can use any other beans of your choice like black beans also really goes well in this salsa)
- 1/4 cup red bell pepper chopped into small cubes
- 1/4 cup green bell pepper chopped into small cubes (capsicum)
- 1/4 cup tomatoes chopped into small cubes
- 1/4 cup red onion chopped into small cubes
- 1/2 cup mango chopped into small cubes
- Salt to taste
- Lime juice to taste
- 1/2 tsp red chilli powder/paprika
- 1 tsp coriander leaves finely chopped for garnishing (cilantro)
Procedure:
Get all the ingredients ready.I used red kidney beans,you can use any beans of your choice.You can also use store bought can,then this salsa can will be ready in no time,other wise you can soak the beans for at least 5-6 hours then cook it with little bit salt till it is soft and tender or else you can pressure cook it for around 5-6 whistles.
Once the beans are cooked (or if you are using ready to eat beans) mix all the ingredients in a bowl and your mango bean salsa will be ready but to be a little fancy, I layered the ingredients in a transparent plastic cup. Add little bit salt and lime juice in the beans and mix it nicely. You can layer the salsa cup in any manner you like.I have first put the base of beans.
then I have layered it with green bell pepper,red onion, red bell peppers, mango, tomatoes and then again a layer of beans and mango.This is the order which I followed.You can make it in any way you like.Keep sprinkling little bit salt and lime juice in each layer while layering the salsa.
Finally sprinkle little bit salt and red chilli powder/paprika on top of the salsa and garnish with little bit of coriander leaves.
Super delicious and healthy mango bean salsa is ready in no time.Chill it for some time in refrigerator and serve.
It is a perfect party appetizer to serve with some nachos or chips. Individual cups really makes it very easy for the guest to serve themselves. For any small gathering just throw all the ingredients in a bowl, mix it and it is ready to be enjoyed. You can also add some chopped pickled jalapeno if you like some heat. It enhances the taste with the sweet mangoes. Do try this and let me know how you like it. Enjoy !!
