Servings: 15-16 medium sized Idlis
Cooking Time: 30 minutes
Ingredients:
- 1 cup fine semolina (sooji/rava)
- 1/2 cup curd (yogurt/dahi)
- 3-4 green chillies finely chopped (you can adjust it according to taste)
- 1/4 cup coriander finally chopped (cilantro)
- Salt to taste
- Water for making batter
- fruit salt ( plain flavored Eno)
- Oil for greasing the idli trays
Procedure:
Take semolina in a deep bowl and
add curd and salt in it.
Now add finely chopped coriander and green chillies in it.
Mix all the ingredients nicely, add water as required. The batter should not be very thin or thick. It should be of medium consistency. Now cover the batter and keep it aside for at least 1 hour.
After 1 hour the batter will be thick as semolina absorbs water. Add in little water again to make batter of medium consistency. Now put the steamer or idli maker on medium heat in which we are going to steam the idlis. Add water in it for steaming.
Now grease the idli trays with oil nicely.
When the water in the steamer or idli maker starts boiling or when it is ready, then add 1 tsp fruit salt (eno) to the batter and mix nicely. You will see small bubbles appearing in the batter. Mix eno/fruit salt only for the current batch of batter that will go into the steamer, then repeat for subsequent batch of idlis. This is important for getting soft and spongy idlis. (Quantity of batter used for making idlis in batches depends upon the size of idli tray you are using for making idlis)
Then quickly fill the greased idli trays with the batter as shown in the picture above and put the trays inside the steamer.Steam the idlis for around 10-12 minutes.Check with a knife,if it comes out clean then it means it is cooked completely. Do not over steam the idlis otherwise they will become hard and dry. Clean the trays nicely and then grease it again for making another batch of idlis. Do not make second batch on uncleaned tray or without greasing it as it will not come out good and stick in the trays.
Yummy quick semolina/rava idlis are ready to be enjoyed.Serve it warm with sambhar and coconut chutney.It goes extremely well with chana dal chutney as well.This is a super easy snack as well as breakfast item. You can also make it without coriander and green chilies if you don’t like to add it.This is perfect lunch box item for kids too.Do try this and let me know how you like it.Enjoy !!
